I have been making some variation on these pancakes for a while now.
Usually I make regular pancakes. You know. The typical type that you get at diners. But the other day, I went to a breakfast place that sold oat pancakes and I was hooked.
Now my Sunday mornings look like this: make these healthy oatmeal pancakes, drizzle on a little pure maple syrup and spend the rest of my day planning for the week. It’s my favorite way to end the week, and make intentions about what the rest of the year (or at least the rest of the school year) looks like.

Oatmeal Pancakes Ingredient List
This pancake batter is made with only a couple of simple ingredients that I am sure you have at home. All you need to make these healthy pancakes is:
- whole milk
- white vinegar
- all purpose flour
- white sugar
- quick oats
- baking powder
- baking soda
- kosher salt
- vanilla extract
- oil (vegetable oil or coconut oil work really well)
- eggs
That’s it!

Tips & Variations
Add in some mix-ins! I love making these pancakes with some chocolate chips mixed in, or some fresh berries. Make it your own, this recipe is so versatile that anything mixed in will taste good.
Make it vegan. Instead of the milk, use a non-dairy milk. I love switching it for almond milk or coconut milk (from a carton and NOT from a can). To make an egg substitute, you can replace the whole egg with a flax egg. All you need to do to make a flax egg is to mix 1 Tbsp ground flaxseeds with 3 Tbsp warm water. Allow to rest for 5 minutes, then you can make the entire recipe as written!
Freeze any leftover pancakes. This is a great way to not waste food, and also to have quick and easy grab and go school breakfasts. All you need to do is allow the pancakes to cool on wire racks at room temperature. Then place in an airtight container or a freezer bag and freeze for up to 3 months. When you want to use them, toast them in a toaster or a toaster oven. Honestly, I think that they are better than most freezer waffles you can get at grocery stores.

Oatmeal Pancakes
Ingredients
- 3/4 cup milk
- 2 Tbsp white vinegar
- 3/4 cup all-purpose flour
- 1 Tbsp sugar
- 1/2 cup quick oats
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 tsp vanilla extrtact
- 2 Tbsp oil
- 1 large egg
Instructions
- In a small bowl, combine milk and vinegar and let it stand for around 5 minutes to “sour”.
- In a separate bowl, combine flour, sugar, oats, baking powder, baking soda and salt.
- Whisk vanilla extract, egg and olive oil into the “soured” milk. Pour the flour mixture into the wet ingredients, and whisk it together until the batter is smooth.
- Heat a large skillet over medium heat and spray with cooking spray. Scoop 1/4 cup of batter for each pancake, and flip when bubbles are covering the surface of the pancake. Flip and cook the other side until it is golden.
Who cares if they're flat, they look yummy! I always do that when I make a mistake, I just pretend that it was meant to be like that!

Doesn't matter if the pancakes end up flat or not because I think it still looks good!! I have only attempted making pancakes from scratch a few times but I could never get the texture quite right >_<

A trick to fluffy pancakes? Let your batter sit for 20 minutes – the baking powder does it's magic and you'll get fluffy pancakes every time.
