Who would have thought that teaching would be such a hard job?
Well, I would have because I’ve been tutoring and running calculus workshops at UBC. But this is always the perception of teachers from many people I meet. As lazy, uninteresting failures of people who get it to wake up and arbitrarily hand out grades, then getting rewarded for it by a really long holiday. Think “those who can, do. Those who can’t, teach.”
Now those are obviously not my views… Teaching is my career of choice.
But by God, I am only teaching one class everyday, and I’m somehow exhausted. Soon I will be up to 3 a day, and I’m getting scared that I won’t be able do it. I mean, the lesson planning, the writing up worksheets/tests/marking. I’m going to have no life!!
And so I have prepared these Peanut Butter Pretzel Truffles as my after-school snacks for the week.
Peanut Butter Pretzel Truffles Ingredients
These peanut butter-pretzel truffles are just made with a couple of simple ingredients. All you need is:
- crushed pretzels
- creamy peanut butter
- salted butter
- brown sugar
- powdered sugar
- semi-sweet or milk chocolate chips
- coconut oil
Tips
Storage: Store these peanut butter chocolate pretzel bites in an airtight container in the fridge for up to 7 days.
Making the crunchy pretzel pieces: If you wanted a quick way to make crushed pretzel pieces, use your food processor. But I have found that the best way to get them more fine is to place the salty pretzels in a ziplock bag. Then, using a rolling pin, roll the pretzels until they become small bits.
Variations
Use graham cracker crumbs instead of pretzel pretzel bits. If you don’t like the salty combination that the pretzels form, or don’t have any pretzels on hand, switch them out for crushed graham crackers.
Switch them up for the holiday season. Whatever holiday you are celebrating, you can make these pretzel peanut butter truffles. I love using white chocolate chips for the melted chocolate on Valentine’s Day, or adding some peppermint for Christmas trays.

Peanut Butter Pretzel Truffles
Ingredients
- 1 1/2 cups pretzel pieces
- 1/2 cup creamy peanut butter
- 1 Tbsp butter, softened
- 2 Tbsp brown sugar
- 3 Tbsp powdered sugar
- 1 cup chocolate chips
- 1 Tbsp coconut oil
Instructions
- Put the pretzels into a large resealable plastic bag and crush into small bits using a rolling pin.
- In a small bowl, combine the peanut butter, butter and brown sugar until fully combined. Add in the pretzel pieces and icing sugar, and mix until fully combined.
- Line a cookie sheet with wax paper. Scoop around 2 tablespoons worth of peanut butter mixture, and gently shape into a ball with your fingers. Place the ball on the prepared cookie sheet, and repeat with the remaining peanut butter mixture. Place in the freezer for around 30 minutes.
- Boil 5 cups of water and pour into a medium bowl.
- Place the chocolate chips and coconut oil into a smaller bowl, and place it into the bowl full of water. Mix the chocolate chips and shortening until the mixture is smooth, making sure not to let the water mix in with the chocolate mixture.
- Take the frozen balls out of the freezer and dip them in the chocolate mixture. Place the dipped peanut butter balls back on the waxed paper. Quickly sprinkle the peanut butter balls while the chocolate is still wet with some extra broken up pretzels.
- In a microwave safe bowl, melt some peanut butter. Drizzle on top of truffles, and freeze until hard.

These look like the perfect pick me up. I have made a similar recipe that uses rice krispies or cornflakes. I think that the pretzels would be a nice salty twist though. Good luck with all your classes!

I imagine the thought of them waiting for you will help with getting through classes 🙂 I can definitely believe that teaching is exhausting – I work at a university and whilst I mostly do research myself, the occasional teaching I do always requires a lot of time / preparation / energy.
