As a matcha latte lover, I can’t get enough matcha flavored things. Give me matcha pudding, matcha pancakes, matcha cookies.. you name it and I will eat it.But lately I have been wanting a healthy snack for after work. Something that doesn’t have too much added sugar but will still satisfy my sweet tooth. I think that this Matcha and Vanilla Chia Seed Pudding is the best way to satisfy my hunger after work in a healthy way.
Matcha and Vanilla Chia Seed Pudding Ingredients
This is one of the easiest breakfasts you can make. You are only 5 simple ingredients away from making it yourself:
- milk
- ceremonial grade matcha powder
- vanilla extract
- maple syrup
- whole chia seeds
That’s it!
Tips & Tricks
Make this matcha chia seed pudding vegan! Instead of regular milk, you can use any type of milk you like! My favorite non-dairy milk to use in this chia pudding is either coconut milk or oat milk. But any nondairy milk would work!
What type of chia seeds do I use? I have made this chia pudding with both black chia seeds and white chia seeds and both work great. If you wanted it to be more of a vibrant green, the white might give the best results.
Do I need to use ceremonial-grade matcha green tea powder? You do not need to, but a higher quality matcha gives a better taste. I often hear people say that matcha tea has a very bitter taste, but I just thing that is because they haven’t tried the taste of matcha when the powder is a better quality. If you can’t get ceremonial-grade matcha, culinary grade also has a great matcha flavour.
It’s all about the toppings! Don’t get me wrong. I love chia pudding recipes on their own. But having the pudding topped with fresh berries or fresh fruit just elevates it to the next level.
Storage: Make sure that you store this green tea chia pudding in an airtight container in the fridge for up to 5 days. I actually think that this Matcha and Vanilla Chia Seed Pudding tastes better the next morning.

Matcha and Vanilla Chia Seed Pudding
Ingredients
- 1 1/2 cups milk
- 1 tsp matcha powder
- 1 tsp pure vanilla extract
- 1 tsp maple syrup
- 1/4 cup chia seed
Instructions
- In a medium bowl, mix together all the ingredients except the chia seeds until fully combined. Mix in the chia seeds and refrigerate. Over the course of the next half hour, whisk the pudding every 10 minutes as it begins to thicken. This prevents the chia seeds from clumping. After the half hour is up, keep refrigerated for 3 hours or overnight.
