Ok. I am finally sane. And do you know why? I HAVE INTERNET!! I had no idea how much I relied on the internet for my sanity.
After a stressful month(!!!) without internet, I am finally connected. I am not finally connected with the rest of the world, without needing to jump from coffee shop to library in order to get what little amount of free internet that I can.
First order of business: make a dessert! I mean, isn’t that how you celebrate too?
And since I have only just recently moved, I don’t have too much organized. Which means baking supplies and ingredients are packed up in boxes and no where to be found.
But no worries. I am all about the mug cake. I mean, making a 4 ingredient mug cake, chocolate vanilla protein mug cake and a 4 ingredient chocolate mug cake basically in the span of one month, you can all see that I have an obsession with chocolate cake. But a portion sized obsession! A “make a dessert in less than 5 minutes” obsession. Which, in my opinion, is the best kind of obsession. It’s the perfect size for a quick in easy recipe that is ready in less time than it takes to make the real thing.
Chocolate Chip Mug Cake Ingredients
This recipe uses minimal ingredients which is a great way to make a single serving dessert in no time! All you need to make this chocolate chip mug cake recipe are 8 simple ingredients:
- 1 Tbsp salted butter
- 1 Tbsp white sugar
- 1 Tbsp brown sugar
- 1//4 tsp vanilla bean paste
- pinch of salt
- 1 egg yolk
- 1/4 cup all purpose flour
- 2 Tbsp of chocolate chips
That’s it!
Tips & Variations
Don’t have vanilla bean paste? While vanilla bean paste takes this recipe to the next level, pure vanilla extract can be used in its place.
Switch up the chocolate! This mug cake is like having a gooey chocolate chip cookie in a coffee mug. But if you like a different cookie every day, try switching up the chocolate chips! I love making it with milk chocolate chips or white chocolate chips. Mini chocolate chips works as well, but it won’t look as good. Just make sure to add some extra chocolate chips on top.
Make this chocolate chip mug cookie vegan! Swap out the chocolate chips with dairy free chocolate chips. As for the egg yolk, you can actually replace it with 3 tablespoons of peanut butter.
Have an extra strong sweet tooth? Add a scoop of vanilla ice cream on top. Or actually, a scoop of ice cream of your favorite flavor would help elevate this single serving cake recipe.
Can I use a whole egg? Instead of an egg yolk, you can use a whole egg. However, the texture will be more fluffy.
Keep an eye on the mug cake batter when it is in the microwave! Different microwaves will cook differently, so you may need to adjust the cooking time accordingly. My advice is to watch the microwave while the mug cake cooks and stop the microwave when it starts to spill over. Wait a little bit then resume your microwave. Now next time you will know how long to cook your cake. Make sure that you are using a microwave-safe mug so that the mug doesn’t overheat.
