I have been obsessed with oatmeal lately.
Am I too late on the oatmeal train? I mean, the weather is finally starting to heat up, and all I can think of in the morning is warm bowls of oatmeal. Just watch. All my summer recipes will be soups and stews. I am so backwards. But in order to make my oatmeal resemble a spring/summer like feel, I am opting for a strawberries and cream oatmeal. Because the strawberries in my local grocery store are looking gooood!
If you have been following along with my posts lately, you might know that I read the book I quit sugar, which made me want to quit sugar for a week. Obviously my efforts failed miserably. (See my Soft Nutella Cookies post a couple of days into my no sugar diet. Oops). But there was one ingredient in the book with no added sugar that intrigued me, because I have both never seen it sold, and I saw a recipe in the book using it that I really wanted to make. That ingredient was coconut cream.
So I started searching everywhere for coconut cream. In the ethnic food sections. In health food stores. Then I finally found some in Bulk Barn. But in my excited haste to buy coconut cream, I didn’t read the label that it was sweetened. Sigh. I think I am purposely sabotaging myself in this no sugar diet.
Despite that mishap, this delicious breakfast idea actually has very little sugar. This easy recipe ensures that you can have a hot breakfast in no time. Definitely one of my favorite healthy recipes for busy weekday mornings.
Strawberries and Cream Oatmeal Ingredients
This easy strawberry oatmeal recipe is made with just a couple of simple ingredients. All you need is:
- any type of milk
- old fashioned oats
- fresh strawberries
- splash of cream (or a splash of milk)
Tips
Make it vegan. Usually, I make this with whole milk because that is what I have on hand. But if you want to make it vegan, use any kind of non-dairy milk you have on hand. I personally love either oat milk, coconut milk or cashew milk for more creamy oats. You can use more watery milk, such as almond milk or soy milk, but it will be a lot thinner.
Swap out the cream. Don’t have coconut cream? Use heavy cream instead!
Use your favorite fresh fruit. While I love making this with juicy strawberries, I also make a variation of these strawberry oats when it is not strawberry season. You can use fresh berries, mangoes, or whatever your favorite fresh fruit is!
Storage: You can store any leftover oatmeal in an airtight container in the fridge for up to 3 days.

Strawberries and Cream Oatmeal
Ingredients
- 1 cup milk of choice
- 1/2 cup old fashioned oats
- 3 large strawberries, diced
- 2 tsp sweet coconut cream
Instructions
- Heat the milk in a small saucepan over medium heat until the milk begins to simmer.
- Add in the oats and bring to a boil. Reduce the heat and allow to simmer for 4 to 5 minutes, stirring continuously until thickened.
- Mix in the strawberries and coconut cream. Enjoy warm.
