I think that this brown sugar meatloaf proves that I do in fact make real food now and again.
By real food, I mean not desserts or oatmeal.
And I mean especially oatmeal. If it were up to me, I would be eating oatmeal for every meal of the day.
But, when I come home to a fridge full of ground beef that needs using (how did that happen?) I am forced out of my oatmeal comfort zone, and into the realm of: what the heck do I do with 1.5 lbs of ground beef?
In all fairness, ground beef is one of the only meats that I feel comfortable cooking. Ground beef, chicken and salmon are my jam. Anything else, and I have this irrational fear that I am going to either ruin it (hello steak!) or poison everyone with salmonella.
As a teenager, I learned to cook with ground beef during my time working at a country club. My job was to sit by the pool and make hamburgers and chicken burgers (but let’s be real, mostly hamburgers) for anyone who came by. So I became very comfortable cooking with those two kinds of meat.
But ground beef especially because I dealt with it the most.
The country club was one of my most favourite jobs when I was a teen. Not only did I get to sit around and enjoy the sun, but I got to experience the joys cooking, and learning new skills and techniques in the kitchen.
And while I would love to recreate my experiences in my new home in Toronto, I am sad to say that I do not have a grill. So making hamburgers is out of the question.
Okay, I know that I can make hamburgers in the oven but… it is just not the same, I’m sorry.
So experimenting with different meatloaves it is.
As soon as I made this brown sugar meatloaf, I knew it was a winner. Mix all the meat ingredients in one bowl, plop it in a loaf pan, mix the brown sugar sauce together and scoop in on top and boom! You’re done!
Okay, I mean you still need to cook it in the oven which takes one entire hour (!!), buuuut you don’t need to do any more prep! You can just sit back and watch an episode of whatever you are binge watching at the moment. Or, you can make a salad or side to go with this meatloaf in that time. Your choice!

Brown Sugar Meatloaf
Ingredients
- 1/4 cup brown sugar
- 1/2 cup ketchup
- 1 Tbsp Worcestershire sauce
- 1.5 lbs ground beef
- 1/2 cup milk of choice
- 1 large egg
- 2 cloves garlic, minced
- 1 1/2 tsp salt
- 1/4 tsp ground pepper
- 1 small onion, diced
- 1/4 tsp ground ginger
- 1 cup seasoned breadcrumbs
Instructions
- Preheat the oven to 350˚F.
- In a small bowl, mix together the brown sugar, ketchup and Worcestershire sauce. Set aside.
- In a medium bowl, mix together the ground beef, milk, egg, garlic, salt, pepper, onion, ginger and breadcrumbs. Pour into a loaf pan and press down.
- Spoon the brown sugar mixture on top of the meat, and cover with aluminium foil.
- Place in the preheated oven for 1 hour.
I’m looking forward to trying this meatloaf in the near future. We make a grilled beef recipe (Jerked beef) that is marinated in brown sugar and the flavor of this combined with the beef is sublime; I can only imagine how wonderful your meatloaf has to taste as well!

What a fun job working at a country club making burgers. Enjoying the outdoors and meeting people must have seemed more like a vacation. Now, your meatloaf looks like a dish our family would love any day of the week. It looks so moist – perfect in fact and the brown sugar sauce must give it so much flavor. I bet the meatloaf makes a great sandwich too.

This recipe was absolutely fantastic. The combination of ingredients made this meatloaf so nice and tender and tasty. The brown sugar glaze was spot on. The family just loved it I served it with mashed potatoes, buttery corn and some delicious gravy.
