I have yet to see pumpkin spiced lattes come out of Starbucks, so it looks like the rest of the world is not ready for fall yet. But I am!! Bring on the apple cinnamon! Bring on the pumpkin! I am ready for you!
These muffins are surprisingly healthy. Perfect for a quick grab and go breakfast that won’t make you feel guilty.
Not like the pop tarts I usually grab on my way to work. Grabbing THOSE in the morning is a one way ticket to sugar crash town.
But these? I think I will be making them once a month for breakfast emergencies, aka: days that I don’t even have time to make oatmeal.
These muffins actually remind me a lot of Thanksgiving. It is basically my meal from start to finish in a muffin form.
You have your applesauce in the form of apples and your cranberry sauce in the form of dried cranberries. Then you have your veggies in the form of carrots, followed by some hearty stuffing, which here I will call it your whole wheat flour. End it off with the pecan pie in the form of pecans and I think you have this fantastically fall recipe.
The whole wheat flour one was a little bit of a stretch. But they sure help keep you full until lunch.
These muffins freeze perfectly too if you can’t eat a large load of muffins at once, or if you are going away for a while, which was my case leaving for Vancouver for these two weeks.
Actually at the moment, these muffins are sitting in my freezer in Vancouver. I actually can’t wait to go back and defrost these!

Carrot, Apple and Pecan Muffins
Ingredients
- 2 cups whole wheat flour
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1 tsp baking soda
- 2 tsp ground cinnamon
- 2 large eggs
- 1/2 cup milk of choice
- 2 tsp vanilla extract
- 1/2 cup canola oil
- 2 medium carrots, peeled and grated
- 1 medium apple, peeled, cored and grated
- 3/4 cup dried cranberries
- 1/2 cup sweetened shredded coconut
- 3/4 cup pecans, chopped
Instructions
- Preheat the oven to 375°F. Line two muffin tins with paper liners. Set aside.
- In a medium bowl, mix together the flour, sugars, baking soda and cinnamon until fully combined.
- Add in the eggs, milk, vanilla and oil until fully incorporated. Fold in the carrots, apples, cranberries, coconut and pecans.
- Divide the batter evenly into the prepared muffin tins and bake in the preheated oven for 20-25 minutes, or until a toothpick inserted comes out clean.
- Allow to cool in the muffin tins for 5 minutes, then transfer to wire racks to cool completely.
Notes
- Store in an airtight container at room temperature for 3 days.
- If you want to freeze these muffins, wait until they are fully cooled before transferring to freezer bags. Store in the freezer for up to 2 months.
