Okay, so I am really trying to space out these oatmeal recipes, but it is so hard because I eat oatmeal almost every day..
Except for days where I eat cream of wheat, which is completely different from oatmeal. Because I posted that on Friday, and I want to give you guys some variety. Is it working?
What you need to make this Coconut Mocha Oatmeal
- coffee
- coconut milk
- old fashioned oats
- honey
- cocoa powder
- shredded coconut
This Coconut Mocha Oatmeal is one of the oatmeal recipes I make the most often in my house. Whenever I have extra coconut milk, I will whip some of this oatmeal up for breakfast.
Heck, even when I don’t have extra. I will open up a can just so that I can have this incredibly thick and creamy oatmeal.
Apart from it being vegan and gluten free, it is SO EASY to make.
As easy as all of the other oatmeal recipes are that I have made in the past.
This Coconut Mocha Oatmeal is the perfect back to school breakfast recipe. For days when making coffee AND breakfast seems like too much effort, why not combine them all into one bowl?
One bowl that takes under 10 minutes to make and will keep you full until lunch. Now we’re talking!

Coconut Mocha Oatmeal
Ingredients
- 2/3 cup strong brewed coffee
- 1/3 cup coconut milk
- 1/2 cup old fashioned oats
- 2 tsp honey
- 1 Tbsp unsweetened cocoa powder
- 1 Tbsp shredded coconut
Instructions
- Heat the coffee and milk in a small saucepan. Add in the oats and honey. Bring to a boil, and reduce the heat. Allow to simmer for 4-5 minutes, stirring occasionally. Mix in the cocoa powder.
- Pour into a bowl and top with coconut.

I would love this and will have to try it come the autumnal season when i tuck into oatmeal a lot more, probably because the weather gets nippy.

I do prefer oatmeal when the weather is cold, but I will eat it in the summer if I am craving it 🙂
