This moist Snickerdoodle Apple Bread is such an easy recipe to whip up on the weekend. Works as a grab and go breakfast, or a sweet snack idea.
Totally not even apple season yet, but I am SO excited for fall flavours that I am getting my start a little early this year. But can you blame me? Apple and cinnamon together get me all drooling and weak in the knees.
Putting these flavours in this Snickerdoodle Apple Bread is the most natural first step.
Bread? Weeell.. more like a cake than a bread. But isn’t that what we do? Call it “apple bread” or “banana bread” so that we don’t feel too guilty about shoving half of the loaf in our face and calling it breakfast?
Speaking from experience, of course.
What you need to make this Snickerdoodle Apple Bread
You need mainly things in your pantry:
- salt
- baking powder
- all-purpose flour
- cinnamon
- salted butter
- brown and white sugar
- eggs
- vanilla extract
- milk
- apples
I made this apple bread twice in one week. Once for me and John… which barely lasted a day, and once for my landlord. She has more self control than the both of us, so I think it lasted 3 days with her.
But don’t worry. You will be seeing more of this bread in my kitchen when apple season begins.
Or maybe you won’t. These breads don’t last long here.
This apple snickerdoodle bread is combining two of my favourite desserts: fruit bread (which is actually cake in disguise) and snickerdoodles.

Snickerdoodle Apple Bread
Ingredients
Bread
- 1/2 tsp salt
- 1 1/2 tsp baking powder
- 1 1/2 cups all-purpose flour
- 1/2 Tbsp ground cinnamon
- 1/2 cup salted butter, softened
- 1 cup brown sugar, packed
- 1/4 cup granulated sugar
- 2 large eggs
- 1 Tbsp vanilla extract
- 1/2 cup milk
- 1 large apple, diced
Topping
- 2 Tbsp granulated sugar
- 1 tsp ground cinnamon
Instructions
- Preheat the oven to 350°F. Lightly grease a loaf pan and set aside.
- In a medium bowl, mix together the salt, baking powder, flour and cinnamon. Set aside.
- In the bowl of a stand mixer, cream together the butter and both the sugars until light and fluffy. Add in the eggs one at a time, mixing after each addition. Mix in the vanilla.
- Alternate between mixing in the dry ingredients and the milk into the sugar mixture until just combined. Fold in the apples.
- Pour the batter into the prepared baking pan and set aside.
- In a small bowl, mix together the topping ingredients. Sprinkle on top of the batter.
- Bake in the preheated oven for 50-55 minutes, or until a toothpick inserted comes out clean.
- Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

haha it’s like muffins v cupcakes. muffins implies health (at least more so), but they’re really just cupcakes without frosting. anyways, this sounds awesome, even if i’m not quite ready for fall yet (;
