Easy 4 ingredient Pina Colada Nice Cream that is ready in under 5 minutes. It’s a banana ice cream, so it is vegan, gluten free and paleo.
We are halfway through September and it is still hot in Toronto! What is this? Global warming?
As long as it means that we won’t have snow this year, I am a-okay with it. I am a wimp when it comes to cold weather.
Hot weather? I can deal with it.
And how do I deal with hot weather? Let me count the ways.

Not very original, am I? Does nice cream count as something different than ice cream? It so, then I deal with the hot weather in two ways.
Never heard of nice cream? Well, it is your lucky day!
Nice cream is basically a “healthy” version of ice cream by blending together frozen bananas with any of your other favourite ingredients. When you blend the frozen banana, the consistency becomes surprisingly similar to soft serve ice cream.
Any time you can get your ice cream to be healthy is okay in my books.
This recipe is so easy to make, and only made with 4 ingredients! It is vegan, gluten free, paleo.. I mean, it is basically health food. THIS should be added to the food pyramid. Or food plate. Or whatever they are calling it these days. This is required eating.
I made this because I had a MASSIVE craving for ice cream when I came home, and had none in the house! Obviously going to the grocery store in the heat would have made matters worse, and I was already tired from working all day. This really hit the spot.

What you need to make this Pina Colada Nice Cream
Only 4 ingredients! All you need is:
- frozen banana
- frozen pineapple
- coconut milk
- shredded coconut

Pina Colada Nice Cream
Ingredients
- 1 medium banana, cut into coins and frozen
- 1/2 cup frozen pineapple chunks
- 1/4 cup coconut milk
- 1 Tbsp shredded coconut
Instructions
- In a food processor or a very good blender, pulse all of the ingredients together until smooth. Scoop into a bowl or a come. Top with additional shredded coconut and pineapple chunks if desired.

I always keep chopped banan in the freezer for when the mood strikes and I am trying to be heaalthy! The cold weather has already arrived in Scotland like you I am a creature of the sun, I much prefer the heat. But the cold will not stop me enjoying frozen treats and this combination sounds awesome.
