I have been longing for fall flavours for months now.
But now that fall has finally arrived, all I want to do is hold on to the summer fresh fruit and vegetables. Peach season has already come and gone. It is not the time of year to be craving fresh juicy peaches. What is wrong with me?
So what do I do with the peaches that I am buying right as they go out of season? Make Ginger Peach Baked Oatmeal. Obviously.
Can you say that you are surprised?
To be honest, I haven’t made baked oatmeal in a long time. Not because I have stopped liking it. I mean, it’s oatmeal after all. It is just that my morning routine looks a little different than way back in the days of my baked oatmeal.
Back then, I would wake up early every day so that I could make some sort of breakfast recipes that I could take photos of before I head out the door for work. That meant waking up at 5 AM every morning to make breakfasts, then having a full day of teaching, then marking/lesson planning in the evenings.
And people always tell me that the life of a teacher is easy..
These days, I have been slacking in the mornings. I have a silent alarm set on my FitBit at 5 AM daily so that I don’t wake John up in the mornings. But what do I do? My half asleep self knows how to turn off the silent alarm, so that I go to sleep immediately after it is off.
Naturally, I now have multiple alarms set in the mornings: 5 silent alarms, around 5-10 minutes apart, and one last chance alarm set LOUD on my phone if I end up turning off all the silent alarms and going back to sleep.
You can bet that I have been waking up to the loud alarm set on my phone these past two weeks. Sorry John.
BUT, I still have time to make breakfast on the weekends.
More like brunch actually. It’s weird, it seems like the older I get, the more I want to sleep in. I have no idea what I’m going to do when I have kids.
Ginger Peach Baked Oatmeal Ingredients
All you need to make this easy breakfast recipe is:
- rolled oats
- brown sugar
- all-purpose flour
- ground ginger
- baking powder
- salt
- eggs
- milk (I use whole milk, but you can also use your favorite non-dairy milk instead)
- oil (I use avocado oil, but any neutral oil works well)
- vanilla extract
- fresh peaches
- plain yogurt
- coconut chips
That’s it!
Tips & Tricks
There are so many different variations you can make of this recipe. If you wanted a more summer recipe, you could replace the peaches with fresh berries. Alternatively, if you didn’t want to keep this recipe as healthy as it is, you could use canned peaches and top it with a scoop of vanilla ice cream. It wouldn’t really be breakfast, but it would sure taste great. I also love drizzling some almond butter or peanut butter on top and adding extra diced peaches to the oatmeal batter.
Want to make this recipe ahead of time? Who can say no to a make-ahead breakfast. The best way to make this into a meal prep breakfast is to whip up a batch of this oatmeal bake on the weekend, then reheat it for breakfast for the rest of the week. Alternatively, if you don’t have time to eat a hearty breakfast before you head out the door, you could place a little bit into some meal prep containers so that you can easily bring them to work with you.
Make it vegan! You can also switch out the milk for almond milk or oat milk, replace the egg with a flax egg and top with a vegan scoop of ice cream or vegan Greek yogurt. It still makes a delicious breakfast with those substitutions!

Ginger Peach Baked Oatmeal
Ingredients
- 3 cups rolled oats
- 2/3 cup brown sugar, packed
- 1/3 cup all-purpose flour
- 1 tsp ground ginger
- 2 tsp baking powder
- 1 tsp salt
- 2 large eggs
- 2 cups milk of choice
- 1/4 cup oil
- 1 tsp vanilla extract
- 2 medium peaches, diced
Toppings
- 1/4 cup plain yogurt
- 1 Tbsp coconut chips
Instructions
- Preheat the oven to 350˚F. Lightly grease a 9×13 inch baking dish and set aside.
- In a medium bowl, whisk together all of the ingredients, except the peaches. Gently fold in the diced peaches and pour into the prepared baking dish.
- Bake in the preheated oven for 25-30 minutes, or until set in the middle. Cut into squares, and top with yogurt and coconut chips, if desired.
Notes
- This oatmeal also tastes great with nectarines instead of peaches.
- Nutritional information is approximate, and depends on what brands you are using as well as the freshness of your ingredients.
- I use avocado oil in this recipe, but any neutral oil works.

OK so I love this recipe. I love oatmeal but it can be boring – I like how you’ve given it a little pomp and circumstance here, and with such delicious flavors. I don’t want to say goodbye to summer, also, so I’m still all about the peach!

HAHA…believe me, there is no such thing as a silent alarm or sleeping in late once you have kids. They are the LOUD alarm…but you get used to it. And although I am not a teacher I know that there is no way that life of a teacher is easy. I really admire your profession.
