Baked Spicy Honey Chipotle Chicken is a nice and easy chicken recipe without all of the fuss. So juicy and tender, this makes a great weeknight meal.

Waking up at 6 AM to go to school, then coming home at 8 PM is really taking its toll on me! As it is, I am trying my hardest to keep my eyes open while typing this.
BUT. I really needed to share this chicken recipe. It can’t wait.
Coming home so late every night leaves me so tired that I have no energy to think up something fancy and time consuming. Something that I can just throw together and stick in the oven is what I do best on weeknights. And that is exactly what this chicken offers.
It seriously takes 5 minutes to prep the chickens and rub all of the spices on top. The hardest part is waiting 40 minutes for the chicken to cook.
An easy cure? Netflix and wine for 40 minutes. Speaking from experience.
This is one of the most juicy and delicious chicken recipes I have ever made.
And don’t get me started on the honey and spices combo! The spiciness of the spices is perfectly balanced with the sweetness of the honey. Best combo ever!!
Just a warning to those who do not like spicy food: this chicken does get spicy. This is how me and my fiance like it: whenever there is an option, we choose “extra hot”. But for those who fall in the “mild” camp, I would reduce or even remove altogether the chili powder.
But not the chipotle. I love love love chipotle powder, and I want to convert the whole world!
The leftovers are almost as good as when it is straight out of the oven. And you can do so much with it: put it in wraps, put it on pizza, eat it cold straight from the fridge while scrolling through Instagram… you know. The usual.
I’m sure this would taste just as good over a grill, but since all I have is my oven in this tiny apartment of mine, baked chicken is the only chicken for me. And to be honest, I wouldn’t have it any other way.

Honey Chipotle Chicken
Ingredients
- 4 large chicken breasts
Spices
- 1 tsp garlic powder
- 2 tsp chili powder
- 1/2 tsp dried oregano
- 1 tsp salt
- 1 tsp cumin
- 1/2 tsp chipotle powder
Glaze
- 1/2 cup honey
- 1 Tbsp apple cider vinegar
Instructions
- Preheat the oven to 350°F. Line a baking sheet with aluminium foil, and set aside.
- In a small bowl, mix together the spices. Dip the chicken in the spices, and coat both sides. Place on the prepared baking sheet.
- Bake in the preheated oven for 30 minutes.
- Meanwhile, mix together the honey and apple cider vinegar in a small bowl.
- Remove the chicken from the oven and coat with the glaze. Place in the oven for an additional 10 minutes. Remove from oven and enjoy!

I have an air fryer that I use that would probably work well with this recipe. It wouldn’t cut the 40 minute cooking time at all, but it might give it a nice crisp.
