Coffee Oatmeal again. This time with figs, berries, chia seeds and peanut butter!
Okay, was this post really a surprise? Coffee oatmeal is basically my go-to breakfast most mornings. You can get your daily cup of coffee along with your breakfast bowl. It is a win win in my books!
I am hoping to convince all of you oatmeal haters out there to learn to love oatmeal. I won’t stop until I convert every last one of you!
…Totally joking, but if you are an oatmeal hater, just try it one more time with fun toppings. Because for me, oatmeal is ALLLL about the toppings!
The topping on this oatmeal is SO GOOD. Peanut butter and figs are my new favourite combo. And if it sounds weird to you… yeah, it also sounded weird to me. But since I eat peanut butter literally every day, I needed to get creative with the flavour combos. And since I had dried figs lying around at home, it seemed like a natural fit.
If you have any interesting peanut butter combos that I should know about, I would love to hear them! I am always looking for new ways to enjoy my daily scoop.. or two.. of peanut butter.
Also, do you see the amount of peanut butter I put on this oatmeal? Just pretty enough for drizzle, but not enough for my tastes. You can bet that I added more peanut butter after that photo was taken!
I have been on a serious oatmeal kick lately that when John asks me to make him breakfast, all I want to do is make him oatmeal. But he eats like a bird in the morning, so I know that if I make him a bowl like the one I make here, he will maybe eat a quarter of it. And since I can’t stand to see food waste, I will eat the rest, along with my own big bowl.
But for those who are usually FAMISHED in the mornings, this breakfast bowl is the perfect recipe to keep you full all the way until lunch.

Fruit, Figs and Peanut Butter Coffee Oatmeal
Ingredients
- 2/3 cup strong brewed coffee
- 1/3 cup milk
- 1/2 cup old fashioned oats
- 2 tsp maple syrup
- 1/4 cup frozen berries
- 1 1/2 tsp chia seeds *
- 2-3 dried figs, chopped
- 1-2 Tbsp peanut butter
Instructions
- Heat the coffee and milk in a small saucepan. Add in the oats and maple syrup. Bring to a boil, and reduce the heat. Allow to simmer for 4-5 minutes, stirring occasionally.
- Pour into a bowl, and top with the berries, chia seeds, dried figs and peanut butter.

I enjoy oatmeal and I love adding my own toppings, but most of the time I just usually add fresh fruits. It would be nice to make it a little more fun and experiment with different toppings like this one!

I have never thought of adding peanut butter to my oatmeal but you’ve showed us all that it’s possible and that it can be good. It’s really perfect because peanut butter is filling and this is all you need for a filling and energizing breakfast!
