Easy Weetabix Chocolate Nests recipe is the perfect no bake snack to make for Easter. This dessert is made with only 4 ingredients.
Is there such thing as a mini egg addict? Because I think I am one.
Every year around Easter I stock up on mini eggs. And yet, they barely last for more than a couple of months. After which, I need to endure the long wait for mini eggs to appear on shelves again next year.
I suppose if they sell them year round they would lose their appeal. So until then, I am making these Weetabix Chocolate Nests on repeat. Gotta get my daily dose of mini eggs!
This is John’s new favourite thing that I make. It has been his #1 request lately, so I haven’t even turned my oven on lately because I have been making these chocolate nests so much.
I don’t really know how to describe them. They are crunchy and crumbly all at the same time, while having the perfect balance of sweetness with the chocolate and the mini eggs. I would call them a no bake cookie, but they aren’t really how you would imagine your typical cookie.
But maybe that is what makes them all the more appealing in the first place.
These cookies also use Weetabix, which maybe a little unfamiliar to some of you. But since I grew up in a house where we had no sugary cereal at ALL, I basically grew up on this cereal.
The only ingredients in Weetabix cereal is whole wheat, barley malt extract, cane sugar and salt. And the sugar and salt content is VERY low. So I never really liked it as a kid.
But now that I can mix it with chocolate and mini eggs, I think this is my preferred method of consuming this cereal. And since it is mostly Weetabix, I can eat these chocolate nests for breakfast, right?
With my (almost) daily breakfast of my mini egg coffee oatmeal, my after school treat of peanut butter mini egg mug cake and now these no bake mini egg cookies, you would think that I would be sick of mini eggs by now.
That really ain’t happening. I have plans to buy some mini eggs from Bulk Barn tomorrow. Because with mini eggs, it is go bulk or go home. That’s my motto.

Weetabix Chocolate Nests
Ingredients
- 140 g chocolate chips
- 1 tsp coconut oil
- 4 Weetabix, crushed
- 40 mini eggs
Instructions
- In a microwave safe bowl, melt the chocolate and coconut oil in 30 second intervals int he microwave, mixing until smooth.
- Add in the crushed Weetabix and mix until fully combined.
- Press inside 10 silicone muffin cups. Place 4 mini eggs inside each chocolate nest and chill in the fridge for at least 1 hour.
