How is it that I have never tried dried blueberries until now??
I have a love for dried cranberries that I fuel almost daily, but for some reason I have never tried dried blueberries.
Maybe it’s a lack of availability. I was walking down the aisles of my local grocery store today, and all I could find were dried cranberries and dried mangoes. Thank goodness Wild Coast Fruit Co introduced me to my new favourite obsession.
At first, I was skeptical. Dried blueberries sound a lot like dried grapes, and dried grapes… well it’s really hard to find a raisin lover these days.
These are like 1000x better than raisins. I actually can’t stop eating them! Will you judge me if I said that I ate an entire bag in one day?
Which is bad, because I really want to make recipes with them so that I can share the love with you. But believe me, it is sooo hard to resist taking a bag of dried blueberries as a snack to work or school. It is one of the only nut free, healthy snack that I have at home at the moment!
Since I actually can’t find dried blueberries in the grocery stores, you can bet that I am going to be shopping at Wild Coast Fruit Co regularly. They are a Canadian brand, originating in BC, which is where I grew up for most of my life!
If you have ever visited BC in the summer, you will know that almost everywhere you go, they are selling fresh blueberries. Some of the best blueberries I have ever tasted came out of Abbotsford, BC, which is where one of the Wild Coast Fruit Co farms are located. So you know that these dried blueberries will be high quality.
Dried Blueberry Coconut Oil Blondies Ingredients
You are 6 ingredients away from making these blondies. All you need is:
- coconut oil
- brown sugar
- egg
- vanilla
- flour
- dried blueberries

Dried Blueberry Coconut Oil Blondies
Ingredients
- 8 Tbsp coconut oil, melted
- 1 cup brown sugar, lightly packed
- 1 large egg
- 1 1/2 tsp vanilla extract
- 1 cup all-purpose flour
- 1/2 cup dried blueberries
Instructions
- Heat oven to 350˚F. Lightly grease a 8×8 baking pan and set aside.
- In a medium bowl, cream together the melted coconut oil and brown sugar until smooth. Stir in egg and vanilla extract.
- Slowly mix in the flour until fully incorporated. Fold in the dried blueberries.
- Pour batter into the prepared baking pan and bake in the preheated oven for 20 to 25 minutes until a toothpick inserted into the middle comes out clean. Remove from oven, and allow to cool in the pan. Cut them into squares and store in an airtight container.
