Summer is finally sticking here in Toronto. The weather is getting so hot that I got my first burn in YEARS! Just in time for my wedding, right? Does anyone know of any way to hide burns, or even out a really bad tan? That would really help me out with this burn situation. In the meantime, it is time for another oatmeal recipe. Pina Colada Oatmeal to be exact.
This Pina Colada Oatmeal is sort of like a holiday in a bowl. Now I don’t need to wait a month for my honeymoon in Hawaii (SO EXCITED by the way!!). All I need to do is make this bowl of oatmeal, and pretend I am lying on a beach, sipping an actual pina colada.
Something I will be doing a lot of in Hawaii, I assure you.
What you need to make this Pina Colada Oatmeal recipe?
Probably items you already have lying around the house. It is only 5 ingredients:
- rolled oats
- coconut milk
- pineapple chunks
- chia seeds
- coconut chips
And the chia seeds and coconut chips are really optional, but highly recommended. It is hard for me to go back to an oatmeal recipe without chia seeds. It adds a thick and creamy texture to your oatmeal that I am addicted to! Try it, and see what I mean!
Suggested add-ins
I personally love the chia seeds and coconut chips, but if you want shredded coconut, by all means, that sounds amazing! For some added health benefits, I will also add some collagen powder and flax seeds to the mix. SO GOOD!!
Another great thing about this recipe is how good it smells when you are cooking it. With the mixture of pineapple and coconut milk on the stove… YUM! It almost makes me want to have Pina Colada Oatmeal every morning for the rest of my life!
I think I am going to try making an overnight oats version of this Pina Colada Oatmeal, with the weather heating up and all. Any other suggestions for what kinds of oatmeal I should be making??

Pina Colada Oatmeal
Ingredients
- 1 cup coconut milk
- 1/2 cup old fashioned oats
- 1 cup frozen pineapple chunks
- 1 Tbsp chia seeds
- 1 Tbsp coconut chips
Instructions
- Heat the coconut milk in a small saucepan. Add in the oats, pineapple and chia seeds. Bring to a boil, and reduce the heat. Allow to simmer for 4-5 minutes, stirring occasionally.
- Pour into a bowl and top with coconut chips.

I remember trying to make a pina colada granola, but it turned out a bit chewy, and I am all about the crunch!

It doesn’t turn out crunchy. Actually, it depends on the coconut chips you use. Mine are very soft so it blends right in with the oatmeal :p
