Give me alll of the cheese and the bacon and the PASTA!! I am most definitely NOT afraid of carbs. They are on the regular rotation in my house, most often in the form of macaroni and cheese.
Are you a fan of bacon? If you are a vegetarian, you don’t need to answer that unless you loved it in your pre-vegetarianism days.
I have never really been a HUGE bacon lover. Sure, I liked it in the mornings when my dad would make a large breakfast with EXTRA CRISPY bacon. Because if it isn’t almost all black and crumbling, I will not touch it. It has got to be crispy!
I was trying to make extra crispy bacon this weekend, but for some reason, it wasn’t crisping up the way I liked it! So I made this Baked Bacon Macaroni and Cheese with the less than ideal bacon.
When it is on top of a mountain of cheese and pasta, I don’t mind the medium crispy bacon at all.
What do you need to make this Baked Bacon Macaroni and Cheese
- elbow pasta
- bacon
- evaporated milk
- milk
- eggs
- garlic powder
- cheddar & mozzarella cheese
Okay, the ingredients may seem weird, but TRUST ME! It is so good, you will have a cupboard full of evaporated milk so you can make this ALL THE TIME. I certainly do!
I have made this Baked Bacon Macaroni and Cheese recipe so many times in the past month, but never felt the need to share it since it is almost identical to my baked macaroni and cheese recipe. But, in case you missed it (it was from last year after all!), here it is again. This time, with bacon!

Baked Bacon Macaroni and Cheese
Ingredients
- 3 cups elbow macaroni
- 5 slices bacon
- 2 (370 ml/12 oz) cans evaporated milk
- 1/3 cup milk
- 2 large eggs
- 1/4 tsp garlic powder
- 4 cups cheddar cheese, shredded
- 2 cup mozzarella cheese, shredded
Instructions
- Bring a large pot of water to a boil. Add salt and macaroni, and cook until al dente. Drain and return to the pot. Set aside.
- Meanwhile, cook the bacon until crispy. Crumble into a small bowl and set aside.
- In a large bowl, mix together the evaporated milk, milk, eggs and garlic powder until fully combined. In a separate bowl, mix together the cheeses.
- Preheat the oven to 375°F. Lightly spray a 9×13 inch baking pan.
- Layer 1/2 of the macaroni, then 1/2 of the cheese. Sprinkle with half of the crumbled bacon. Repeat with the remaining macaroni and cheese mixture. Pour the milk mixture over top. Sprinkle the remaining bacon evenly on top.
- Bake in the preheated oven for 25-30 minutes.
