Fluffy Blueberry Pancakes recipe made with fresh blueberries. So easy to make, and somewhat healthy, they make a delicious filling breakfast idea.
Can you believe it has took me all of this time to make the most classic breakfast recipe ever? The real question is, is there even a time when I walk into a breakfast restaurant and DON’T order Blueberry Pancakes?? Either on the side or as the main attraction, it is definitely one of my favourite things to eat for breakfast.
Even by itself, the recipe for the pancake BASE is amazing. But adding in blueberries.. I am drooling just looking at the photos of these Blueberry Pancakes. They were done too soon!!
I make this batch for 2 people, and usually we can polish it off in one sitting. But if you can’t, these Blueberry Pancakes freeze really well. Just allow them to cool at room temperature, place in a freezer bag and boom. You have instant toaster pancakes!
I actually can’t tell you what I like better: having this as toaster pancakes or right off of the skillet.
Possible mix-ins for these Blueberry Pancakes
I like these just as they are, but I have also tried it with lemon zest and some lemon juice mixed in and it tasted amazing! You can also add in chocolate chips (I prefer white with this recipe) or anything else you can think of really!

Blueberry Pancakes
Ingredients
- 1 cup milk
- 2 tsp white vinegar
- 1 1/4 cups all-purpose flour
- 1/2 tsp salt
- 1 Tbsp baking powder
- 1 1/4 tsp granulated sugar
- 1 large egg
- 1/2 tsp vanilla extract
- 1/2 Tbsp salted butter, melted
- 1/2 cup blueberries (fresh or frozen)
Instructions
- In a small bowl, mix together the milk and vinegar. Let sit for 5 minutes to "sour".
- In a large bowl, mix together the flour, salt, baking powder and sugar.
- When the milk has soured, beat in the egg, vanilla and butter. Add the wet ingredients to the dry ingredients, and mix until fully combined. Fold in the blueberries.
- Allow the batter to rest for 30 minutes to 1 hour.
- Heat a large skillet over medium heat and spray with cooking spray. Scoop 1/4 cup of batter for each pancake, and flip when bubbles are covering the surface of the pancake. Cook the other side until it is golden.

These look seriously fluffy! I will try your base recipe and add some of the Saskatoon berries from our garden! I have never tried to freeze pancakes before but your idea to heat them up in the toaster is great! Will definitely try this as well!
