Call me crazy, but I love a good soup in the summer! Not cold soups either, I can’t stand those. Give me a hot, steaming bowl of soup any time of the year and I am a happy camper. This particular soup has been happening on repeat in my house this summer. I’ve gotta get the most of asparagus while they are still in season!
I made this soup weeks ago before I left for Vancouver, but it was so good that I made it all the way until the week I left. Now looking at the photos, I wish I was eating some of this soup right now!
Instead I am packing for my honeymoon!! We booked our flights and Airbnbs months ago to the Big Island, but we might have picked the worst time to travel there. First, with the volcano STILL erupting, and now with the hurricane headed in that direction.. we just can’t catch a break! Hopefully that won’t affect our honeymoon TOO much.
But on the plus side, our wedding went great! Even though I was so tired at the end of the night, the day and night flew by and I got so many compliments on how well it went. I can’t take any of the credit, because my mother in law basically planned the entire thing, but it went seamlessly and it was beautiful. I will be sure to share photos, and maybe do an upcoming post about it. If I can find the time.
Between the 17 day honeymoon and getting back to teaching a new school year, it may be a while until I share the photos and details with you all. But don’t worry. It will happen!
Anyways, enough about the wedding! You are here about the Vegan Cream of Asparagus Soup. Can I call it a cream of asparagus soup if it’s vegan??
You really don’t need to add cream if you blend up a couple of potatoes into your soup. It makes the soup SO creamy, and a lot more filling. Lately, I have been trying to eat a more plant based diet, so having this soup in my back pocket will really help me stay on track.
I got this soup ready in around 30 minute, which is awesome for a weeknight meal. If I can find some good asparagus when I come back to Toronto in September, you can bet that I will be making this soup!

Vegan Cream of Asparagus Soup
Ingredients
- 2 Tbsp avocado oil
- 1 medium onion, diced
- 1 stalk celery, diced
- 1 clove garlic, minced
- 2 small russet potatoes, peeled and cubed
- 3 cups asparagus, trimmed and cut in 1 inch pieces
- 5 cups vegetable broth
- 1/4 tsp ground pepper
- 1 tsp lemon juice
Garnish (optional)
- coconut milk
- cayenne pepper
Instructions
- In a large saucepan, heat the olive oil on medium heat. Cook the onion, celery and garlic until the onion are fragrant and translucent. Add the potatoes and asparagus and mix well.
- Add in the vegetable broth and bring to a boil. Reduce heat and allow to simmer until the vegetables are soft.
- In batches, puree the soup in a blender until smooth. Pour back into the saucepan.
- Add in the pepper and lemon juice, adding more if desired. Continue to cook on low until ready to serve.
- When ready to serve, scoop into bowls and top with coconut milk and cayenne pepper, if desired.

Mmmm this is loooovely! And adding potatoes to soups make them so nice and creamy 😀 I can’t stand cold soups either, same with Bloody Marys – you just expect savoury soups/drinks to be warm! 😛
