Easy Berry Peanut Butter Coffee Oats recipe. Topped with hemp hearts, this is one of my favourite oatmeals to make for breakfast or brunch.
I’m not sure when it was in my life that I became super obsessed with oatmeal, but I would like to say that it was around the time I moved out of my parents house. I sure wasn’t all that excited about oatmeal when my dad would make a huge bowl of it for us kids and leave it in the microwave for when we woke up. Somehow, he always managed to make the bowl overflow, so I would need to clean the microwave before I headed out to class.
Now of course, I look back fondly to those days. It’s the thought that counts, right?
So once I realized in my adult life how cheap it is to make oatmeal, it became my new favourite breakfast. I would and have put almost everything in my oatmeal, such as mini eggs, ice cream and white chocolate to name a few. It is so easy to make oatmeal that I can try something new every day.
The base to all of my oatmeal recipes is 1 part oats, 2 parts liquid and sweeteners/add ins to my liking. It changes from day to day, but my real weakness is berries on oatmeal. Just writing that down is giving me strong cravings for berry oatmeal. So naturally, I am making this Berry Peanut Butter Coffee Oats on repeat.
I missed most of berry season this year because of my time getting married and going to Hawaii for my honeymoon. Obviously not complaining at ALL, but I am trying to make up for lost time by buying and eating all of the berries.
This Berry Peanut Butter Coffee Oats has been my breakfast for the past week. I swear. I have tried different berries, different toppings and a different liquid base, but I have decided that I can’t beat this strong brewed coffee base with raspberries and blueberries on top, drizzled with natural peanut butter. I’m only posting the winners here!
The coffee base is key, especially on weekdays now that I am getting back into the swing of my work schedule. Also, changing from Hawaii time to the 6 hour time difference in Toronto has been BRUTAL this week. Barely sleeping, and waking up early to teach teenagers who don’t want to do math? I’m not sure it’s even possible to do this without coffee.
So while oatmeal hasn’t always been my favourite growing up, I have tweaked it and perfected it to fit MY tastes and requirements (aka coffeeeeee ☕) in the morning. Now, I can’t go a day without it.

I also never used to love oatmeal, but now we make it 5/7 days of the week! I’m always looking for ways to dress it up a bit, and making it with coffee sounds just about perfect!

Coffee in oatmeal?? You could really be on to something here! How is it that I’ve never thought of this? I usually don’t eat breakfast until I get to work. How well do you think this oatmeal would keep in a thermos for an hour or so?
atasteofmadness
I have never tried it, but I think it would be fine!

I seriously need to try that one! Since I’ve been eating oatmeal for breakfast I have sticked to the same (oatmeal + milk + frozen cherries + almonds) but coffee… you speak my language!

This Berry Peanut Butter Coffee Oats recipe looks amazing. Blueberries and raspberries never seemed to be unable to fit with peanut butter but it looks great here. Good idea.
