Healthy Gingerbread Oatmeal Recipe. Can be made vegan and filled with all of the fall spices. Perfect breakfast for the holidays.
Now that January 1st is just around the corner, I am being told by all these magazine articles (that I finally have the time to read during the holidays) that I need to reinvent myself. Get healthy. Eat differently.
New year, new me? Try the same old me making my favourite breakfast of oatmeal on repeat. But this time, it is somewhat healthy. Not topped with ice cream, not covered in Nutella, but a plain, simple gingerbread oatmeal topped with a healthy dollop of vanilla yogurt.
Gingerbread holds a special place in my heart. Back when I was a kid, I remember waking up to the smell of gingerbread cookies during the holidays and spending the rest of the day decorating them. Looking back at them, I would have probably thought that the decorating job was hideous, but back then I thought I was a pro.
Now in the New Year, I am only going to make cookies for special occasions. Like birthdays… or Tuesdays. Every other day, I can use this oatmeal as a pretty decent and filling substitute.
My favourite thing about oatmeal is that it is so easy to make AND you can make it as healthy or as UNhealthy as you like.
Perfect for the New Year new me, but also perfect for treating myself on my birthday. Which is also in January. My birthday cake recipe that I am planning to make in January is probably not going to be popular with all of you guys out there trying to eat healthier.. but it has to be done!
Perhaps I will make a healthy cake for my birthday instead. But knowing me, I will probably have my birthday cake oatmeal for breakfast and my birthday cake oreo blondies for dessert.
Some things don’t change.
But one thing that will inevitably change is my taste in oatmeal. New Year, New Month, New Oatmeal recipe. My favourites will keep changing monthly, if not weekly.

Gingerbread Oatmeal
Ingredients
- 1 cup milk of choice
- 1/2 cup rolled oats
- 2 tsp pure maple syrup
- 3/4 tsp ground cinnamon
- pinch of ground cloves
- pinch of ground ginger
- pinch of ground allspice
- pinch of ground nutmeg
- pinch of ground cinnamon
- vanilla yogurt (optional)
Instructions
- Heat the milk in a small saucepan on medium heat. Add in the oats, maple syrup and the spices. Bring to a boil, and reduce the heat. Allow to simmer for 4-5 minutes, stirring occasionally.
- When thickened, pour into a bowl. Top with yogurt, if desired.
I love all your oatmeal recipes, sure beats the boring oatmeal I eat most of the time. Anyway Happy New Year 😀

I make oatmeal quite often on the weekend and love playing around with different flavors! Never tried gingerbread flavor but it sounds so delicious! Don’t know why I never thought about this combination!)

We don’t make oatmeal often enough! We have to change that. And this gingerbread oatmeal will be a great addition to our basic oatmeal recipe.

Gingerbread in oatmeal form?! Ahhh I’m so excited to try this! Gingerbread is my favourite cookie flavour, there really isn’t a lot better, and now I can have them for breakfast without actually eating cookies for breakfast… thanks for sharing!

What a great idea to combine oatmeal and gingerbread flavor! My son is not a fan of oatmeal but he loves gingerbread (obviously). I’ll give this recipe a try for sure!

Instead of oatmeal for breakfast being blah, I would actually look forward to it. The spices really perk up the flavor and I love that you sweeten it with maple syrup. Also the vanilla yogurt naturally would be sweet. YUM!! I’m making this for breakfast this week.

I’m normally a die-hard brown sugar & cinnamon oatmeal girl, but I love the idea of gingerbread. And I really love that you did your own blend of gingerbread spice, not the ready-made stuff in a jar. I’m going to definitely give this a try for teh holidays
