These are the best Lemon Pistachio Muffins I have tried so far! This recipe makes a moist and tender muffin with a light lemon flavour.
I am literally counting down the days until December 21st. That is the day that I am flying into Vancouver for the holidays, and I get to see John for the first time in what seems like forever.
Even though I can hardly believe how quickly the days are passing, I am still eagerly awaiting the 2 week vacation we teachers have.
In the meantime, I still need to think about Christmas presents. I haven’t been Christmas shopping yet, which is worrisome for me because I tend to do everything last minute. And last minute Christmas shopping is one of the worst things ever. Yet I seem to do it Every. Dang. Year.
How about I buy everyone on my list this “Oh Sweet Day” Cookbook??
I received this cookbook a month ago from Fanny of the site www.ohsweetday.com and have been blown away by all of the delicious sounding recipes and the gorgeous photos. I may just want to bake through all of the recipes in the 2 weeks I have off work.
One of my friends came over to my house to visit, and as soon as she saw this cookbook she said she wanted to borrow it.
Unfortunately, I wasn’t done with trying out the recipes just yet, so I kept it. But it was also fortunate that she showed an interest in it. This way, it makes it so that there is one less Christmas present that I will need to think about this year!
Flipping through all of the recipes in this book made me want to reach my hands through the pages and eat each and every one of the desserts.
But, having just bought a HUGE bag of pistachios a couple of weeks ago, my eyes went instantly to these Lemon Pistachio Muffins.
Unfortunately I didn’t have much powdered sugar, or else I would have done the glaze, like Fanny did in the beautiful photo below. But in case you guys wanted to try it out, I included the recipe for the glaze from the book below as well.
These muffins are so good that when I gave some to my landlord, she told me that I should patent this recipe. But when I told her that it wasn’t mine, she wanted me to try more recipes from the book. And also to replace the pistachios with walnuts next time for something new.
I’m telling you, these Lemon Pistachio Muffins are good enough to eat for breakfast, but also a nice treat to have for dessert or with your cup of coffee or tea. Me and my landlord are already addicted!

Lemon Pistachio Muffins
Ingredients
Muffins
- 2 cups all-purpose flour
- 3/4 cup granulated sugar
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 2 large eggs, room temperature
- 1 cup milk, room temperature
- 1/2 cup unsalted butter, melted and cooled
- 1 Tbsp lemon zest
- 1/4 cup lemon juice
- 1/2 cup pistachios, roughly chopped
Lemon Glaze (optional)
- 1 cup powdered sugar
- 2-3 Tbsp lemon juice
- 1/4 cup pistachios, roughly chopped
Instructions
Lemon Pistachio Muffins
- Preheat the oven to 350˚F. Line two muffin pans with liners.
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda and salt.
- In another large bowl, whisk together the eggs, milk, melted butter, lemon zest, and juice.
- Stir in the flour mixture until just incorporated. Fold in the pistachios.
- Evenly divide the batter among the prepared muffin cups.
- Bake 15 to 20 minutes, until a toothpick inserted in the muffin comes out clean.
- Let cool completely.
Lemon Glaze
- Whisk in the sugar and lemon juice until slightly thickened and pourable.
- Spoon the glaze over the muffins. Sprinkle the pistachios on top.
