Is it where I live, or does it seem like winter just started this weekend?
I look at my phone, and there is a high of -14°C, but then I scroll down and it says “feels like -22°C”.
To my American readers, that is -8°F. In other words, too freaking cold to leave my house.
So what do I do? I stay in and look through my cupboards to see what I can do with the ingredients that I already have at home.
What are my staples that I always have in my pantry? Pasta, pumpkin, garlic and alllll of the spices! So this Vegan Pumpkin Spaghetti was inevitable.
While this meal doesn’t typically scream comfort food to warm you up on a cold day… well, I didn’t have many ingredients to work with. I was really craving a large bowl of chili (like my spicy slow cooker chili), but had no beans, no ground beef, no nothing.
To be honest, by the time I ended up eating it, which was probably 20 minutes after coming up with the idea, it was all I wanted to eat. And all I want to eat for the rest of the week!
Be it snowstorms, busy weeknights or because it is a Monday. I would tell everyone to make this recipe. It is a life saver!
It definitely helped me out. No need to put on 5 layers to leave the house. I have dinner covered, no matter what kind of snowstorm or cold weather Toronto tries to throw at me!

Vegan Pumpkin Spaghetti
Ingredients
- 8 oz spaghetti
- 1 Tbsp salted butter
- 2 cloves garlic, minced
- 1 cup pumpkin puree
- 1 cup vegetable broth
- 1/4 tsp ground nutmeg
- 1/4 tsp chili powder
- 1/4 tsp paprika
- 1/4 tsp black pepper
- 2 Tbsp coconut milk
Instructions
- Set a large pot of salty water to a boil. Cook the spaghetti according to package instructions. Drain and set aside.
- Melt the butter in a large saucepan. Add in the garlic and cook until brown and fragrant, around 1-2 minutes. Add in the pumpkin puree, vegetable broth, nutmeg, chili powder, paprika and black pepper, and stir to combine. Mix in the coconut milk and cooked spaghetti.
