Easy St Patrick’s Day Ice Cream Cake recipe. Made with prepared ice cream, weetabix and mint m&ms, this makes a great last minute dessert idea.
Saint Patrick’s Day is in a couple of weeks, and I can honestly say that I am not that excited.
I think that the original purpose of Saint Patrick’s Day: as the religious celebration of Saint Patrick the patron saint of Ireland, is totally forgotten. It is all about drinking, wearing green, and drinking some more.
I can’t say that that is really my scene.
But what I CAN get behind is the green coloured treats!
I jump on any excuse to bake or make sweet treats, especially when there is a theme. As a food blogger, I am always expected to make new treats almost every week. And with that much pressure behind making new things, I am often stumped on what to make.
At least with Saint Patrick’s Day approaching, I have a clear theme: green and white or rainbow.
I guess I could be doing drink concoctions, but surprisingly, I am not a huge drinker.
This Easy St Patrick’s Day Ice Cream Cake is one of the laziest ice cream cakes that you can make. Literally just melt down ice cream and plop it in a pan. You don’t even need to make it from scratch.
I know there are food bloggers out there that would be embarrassed to put this up. It isn’t so much of a recipe as a cute way to decorate ice cream for Saint Patrick’s Day. But I don’t care. I have no shame in putting up recipes using premade ingredients.
Because I have a full time teaching job, I will take as many baking shortcuts as I can!
I use Weetabix in this recipe because I impulse bought a couple of boxes a while ago. You can also use Shredded Wheat or another similar cereal in the place of it, but Weetabix really gives it a nice texture.
Plus, it almost seems like you are eating something healthy and wholesome in the base. Almost.
So whether you are making this Easy St Patrick’s Day Ice Cream Cake for Saint Patrick’s Day, for a birthday, or just because it is a Monday, it is well worth the (minimal) effort.

St Patrick's Day Ice Cream Cake
Ingredients
- 140 g chocolate chips
- 1 tsp coconut oil
- 4 Weetabix, crushed
- 5 cups vanilla ice cream, melted
- green and white m&ms
- green sprinkles
Instructions
- In a microwave safe bowl, melt the chocolate and coconut oil in 30 second intervals int he microwave, mixing until smooth.
- Add in the crushed Weetabix and mix until fully combined. Press into a greased pie pan.
- Once hardened, pack the vanilla ice cream in the pan. Decorate with the m&ms and sprinkles, then place in the freezer to harden.
