It’s Thursday! The weekend is near! I can taste it!
Or maybe it is these Snickerdoodle Pancakes with Cinnamon Glaze that I am tasting. They do make it feel like the weekend, even though I am eating them on a weekday morning.
I am obsessed with these pancakes at the moment. Not only are they stupid simple to make, they have this flavour that I can only characterize as fall in a breakfast bite.
Even though it was JUST the first day of spring yesterday.
What can I say, I am always in a fall mood.
These pancakes kind of remind me of my whole wheat gingerbread pancakes that I made a while ago, but so much better because I made my own glaze.
You can honestly double,triple, quadruple this glaze. I ate it by the spoonful, and would put it on anything. Heck, I made it the other day WITHOUT the pancakes because I like it so much.
The glaze is everything. Do NOT make these pancakes without it!
Of course, one of my favourite things about making pancakes is the leftovers.
Did you know that you can freeze leftover pancakes and toast them up throughout the week? Ever since I learned that trick, I have been making these pancakes nonstop.
Who knows? Maybe pancakes will replace my daily oatmeal.
Probably not. But these Snickerdoodle Pancakes are definitely in the running!

Snickerdoodle Pancakes with Cinnamon Glaze
Ingredients
- 3/4 cup milk
- 2 Tbsp white vinegar
- 1 cup all-purpose flour
- 2 Tbsp granulated sugar
- 2 tsp ground cinnamon
- 1/2 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- 1 large egg
- 2 Tbsp salted butter, melted
Glaze
- 1 cup powdered sugar
- 1 tsp vanilla
- 2 tsp ground cinnamon
- 2-4 Tbsp milk
Instructions
- In a medium bowl, combine the milk and the vinegar, and let stand for at least 5 minutes to “sour”
- In a separate bowl, combine flour, sugar, baking powder, baking soda and salt in a large mixing bowl. Whisk egg and butter into the “soured” milk. Pour the flour mixture into the wet ingredients, and whisk it together until the batter is smooth.
- Heat a large skillet over medium heat and spray with cooking spray. Scoop 1/4 cup of batter for each pancake, and flip when bubbles are covering the surface of the pancake. Flip and cook the other side until it is golden.
- Glaze: In a small saucepan, mix together the glaze ingredients on medium heat until melted. Pour over pancakes and enjoy!
