Easy Nacho Quesadillas recipe. The perfect lunch or snack idea to make when you have extra olives that need to be used up.
The sole purpose of me buying black olives last week was to make nachos.
So I made quick and easy nachos the other night, but that only used up half of the can of olives.
What to do with the rest of the can??
Turns out, the only idea I have is more nachos.
Well, nacho inspired dishes.
This week, it’s Nacho Quesadillas on repeat. Next week, who knows? Maybe it will be nacho omelettes that take the spotlight.
This recipe couldn’t be more easy to make. All you need is 5 ingredients:
- corn tortillas
- cheese
- olives
- tomatoes
- guacamole
You can add green onions if you like, but I really only used it as a garnish!
I can’t resist a good quesadilla recipe, and this one is as good as it gets!
You can get store bought guac (that is what I used here) or maybe try making your own if you aren’t too lazy (like me!!).
This spicy guacamole that I made a LONG time ago is a winner. Just saying!! 😉
Nacho Quesadillas
Ingredients
- 2 small corn tortilla
- 1/3 cup cheddar cheese, shredded
- 2 Tbsp black olives, sliced
- 2 cherry tomatoes, chopped
- 1/4 cup guacamole
Instructions
- Sprinkle one tortilla with the cheese and top with olives and cherry tomatoes. Top with the second tortilla.
- Lightly spray a large skillet with cooking spray. Place the quesadilla on the skillet and cook on medium heat for 2-3 minutes on each side, or until the cheese has melted.
- Top with guacamole and enjoy!
