So… I have been saving this recipe in my drafts folder for almost a year now, waiting to post it around the 4th of July.
But this summer has been a blur of activity, that the 4th of July came and went without me noticing.
To be fair, I’m Canadian. And I was in Italy. I don’t feel too bad about it.
But now you have the recipe a month later! Yay!
Plus it’s not like you NEED to eat this on the fourth of July. The ingredients are available all year round.

Preferably from Wild Coast Fruit if you are in Canada. I will have to find a different place to buy my dried blueberries now that I am moving to the US.
These Blueberry, Cranberry and White Chocolate Cookie Bars are some of my favourite bars to make. I have made the cookie base before in my Chocolate and Pretzel Cookie Bars as well as my regular Chocolate Chip Cookie Bars, so I knew that they would be good with white chocolate and dried fruit.
When you have something that works, why try to fix it?
Anything in the form of a cookie bar goes really quickly in my house.
It’s funny, because none of the store bought desserts go very fast. They stick around for weeks, it seems like I always need to make more and bake more to satisfy everyone.

Blueberry, Cranberry and White Chocolate Cookie Bars
Ingredients
- 1 cup salted butter, melted
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 1 Tbsp vanilla extract
- 2 cups all-purpose flour
- 1/3 cup dried blueberries
- 1/2 cup dried cranberries
- 1/3 cup white chocolate chips
Instructions
- Preheat the oven to 350ºF.
- Line an 8×8 inch baking pan with parchment paper. Set aside.
- In a large bowl, cream together the butter and sugar until fully combined. Add in the eggs and vanilla until fully incorporated.
- Mix in the flour until just combined. Fold in the dried blueberries, cranberries and white chocolate chips.
- Pour the batter into the prepared baking pan, and bake for 35-40 minutes.
- Remove from oven, and allow to cool completely.

I used to try and do July 4th recipes but I always forgot and at the end of the day I’m British so I just decided to give up doing them! I bet these are fantastic any time of the year.

What a great idea for red, white and blue themed foods! Not that I would need a theme to eat one of these, they look fantastic and pretty easy to make. I’m not much of a baker but I think I can handle this. Great post!
