In exactly one week, I will be moving to Chicago.
Moving without any pots, pans, plates, utensils and… most importantly… WITHOUT A STAND MIXER!
How am I going to survive?
I gave away my stand mixer to my friends for their wedding, and I am missing it SO much.
So now, what I am THINKING of doing for the first week I am in Chicago is buying a baking sheet and making these Easy Nachos on repeat.
Nachos can be a meal, right??
What makes me love this recipe most is that it is made with only 5 ingredients.
5 ingredients that are going to be in my new house within the first 24 hours for SURE!
All you need is
- tortilla chips
- cheddar cheese
- mozzarella cheese
- black olives
- cherry tomatoes
Cherry tomatoes optional. John doesn’t do tomatoes, so I might leave them off of his half.
Ever since I made my Nacho Quesadillas, I have been craving nacho everything.
I have since made a Nacho omelette which I am SUPER excited to share with you. But I will be saving that for when moving gets busy, and I have no time to update the blog.
For now, you get my new go-to snack.
Or dinner. Whatever time of day it is is what meal I will call it. Cool? Cool.
Easy Nachos
Ingredients
- 4-5 cups round tortilla chips
- 1 cup cheddar cheese, shredded
- 1 cup mozarella cheese, shredded
- 1/2 cup black olives, sliced
- 1/4 cup cherry tomatoes, halved
Instructions
- Preheat the oven to 325°F. Line a baking sheet with aluminium foil.
- Lay the tortilla chips in a thin layer. Top with the cheeses and olives, and bake in the preheated oven for 5-10 minutes.
- Top with cherry tomatoes and serve immediately.

Love all those black olives! Nachos are one of my favorite easy meals but I have never thought to add black olives. Genius! Totally doing that next time!
