Easy Salted Olive Oil Brownies recipe. The perfect dessert idea that is soft and chewy on the inside with a crinkly brownie top
It’s almost the first day of school with ACTUAL students and I am stress baking like crazy up in my kitchen. In the past week, I made 2 batches of cookies, 1 batch of blondies, too many mug cakes to count and these Salted Olive Oil Brownies.
And I’ve got to say. These brownies take the cake. Or the square…? I’ve got to rethink these expressions.
For YEARS I have been making these Nutella Brownies as my go-to brownies. I actually have the recipe memorized; not that a 7 ingredient easy recipe is all that hard to memorize.
But now that we are in Chicago, John has been insisting that we eat healthier. That means, he will not let me buy Nutella. I guess I will have to find other ways of getting my chocolate fix.
These brownies might be the fix I was looking for. I kinda cheated on the “eating healthy” front by buying a bar of milk chocolate. Since I felt totally guilty for not keeping up my end of the bargain of eating healthy, I melted it into these brownies so that we can share in the unhealthy eating habit that I can’t seem to kick.

Salted Olive Oil Brownies Ingredients
This brownie recipe is made with just a handful of ingredients, and is so good! All you need is:
- light olive oil
- chocolate bar
- granulated sugar
- vanilla extract
- large eggs
- all purpose flour
- instant coffee (or espresso powder)
- flaky sea salt
Equipment Needed
- 8 inch square pan
- parchment paper
- microwave safe medium bowl
- rubber spatula
Tips
Storage: store these brownies in an airtight container at room temperature for up to 4 days.
What kind of olive oil to use. You really want a mild oil when baking these brownies. Extra-virgin olive oil would have a very strong olive oil flavor, which wouldn’t be ideal in this recipe. If you don’t have olive oil on hand, you could use avocado oil, vegetable oil or canola oil.
Getting your ideal texture: This recipe produces chewy brownies. If you do not like a chewy texture, add an extra egg to the chocolate mixture. This will result in a cakier brownie.
Variations
Top with a hard chocolate coating. Just melt some chocolate chips and coconut oil in a heatproof bowl, then pour the melted chocolate on top of the warm brownies.
Make these chocolate brownies even more chocolaty. Because I love the occasional crunch of a chocolate chip, I love adding in some dark chocolate chunks. If you wanted a more deep chocolate flavor, I would replace the milk chocolate bar with a bittersweet chocolate bar.

Salted Olive Oil Brownies
Ingredients
- 1/4 cup mild olive oil
- 227 g milk chocolate, chopped
- 3/4 cup granulated sugar
- 1 tsp pure vanilla extract
- 2 large eggs
- 1/4 cup all-purpose flour
- 1 Tbsp instant coffee
- sea salt
Instructions
- Preheat the oven to 350˚F. Line an 8 inch square pan with parchment paper and set aside.
- In a microwave safe bowl, heat the oil and chocolate in 30 second intervals, mixing until the chocolate is melted.
- Mix in the sugar and vanilla. Beat in the eggs one at a time until fully incorporated. Slowly mix in the flour and instant coffee until just combined.
- Pour the brownie mixture in the prepared pan and sprinkle with salt. Bake in the preheated oven for 30 minutes.
- Allow to cool completely until cutting the brownies.
