Easy Fudgy Chocolate Cookies recipe. These chewy bite sized desserts taste like a brownie, it makes a perfect nut free snack idea.
Is it bad that I already want a holiday?
The workload this semester seems to be piling on, and I am ready for the summer holiday.
Too bad it has been snowing all weekend. Summer seems to be unimaginable at this point.
Even though I have very little free time these days, I will not give up baking. I would go crazy if I had go a day without turning on the oven.
So these days, my baking mostly looks like mug cakes and cookies. Anything that I can have finished in under 30 minutes.
And these Fudgy Chocolate Cookies really hit the spot.
These cookies are very similar to my Chocolate Crinkle Cookies. In fact, they are almost identical, except for these are made without the powdered sugar.
Because rolling them in powdered sugar means extra time. And I don’t have extra time these days.
So this recipe is just a lazy day version of my favourite Christmas cookie recipe.
Technically, these cookies take a lot longer to make than 30 minutes. That is, if you count the time it takes chilling in the fridge.
But that is actually the reason that I love making these cookies on a particularly busy week. I can make them well ahead of time, and just get out my cookie scoop and scoop them onto a cookie sheet when I feel like warm cookies.
So while we wait for warm weather and lazy holidays, these cookies can get us through the week. No matter how long it feels.
Fudgy Chocolate Cookies
Ingredients
- 2 cups granulated sugar
- 3/4 cup avocado oil
- 4 large eggs
- 2 tsp vanilla extract
- 3/4 cup unsweetened cocoa powder
- 2 1/3 cup all-purpose flour
- 2 tsp baking powder
- 1/2 tsp salt
Instructions
- In the bowl of a stand mixer, mix together the sugar and oil. Add in the eggs one at a time, mixing until fully incorporated. Stir in the vanilla.
- In a seperate bowl, mix together the cocoa powder, flour, baking powder, salt. Slowly add into the wet ingredients, mixing until fully combined.
- Cover, and place in the refrigerator for at least 6 hours.
- Preheat the oven to 350˚F. Line 2 cookie sheet with parchment paper.
- Using a cookie scoop, scoop the cookie dough onto the cookie sheets. Bake in the preheated oven for 12-14 minutes. Remove from oven and allow to cool on cookie sheet for around 5 minute. After 5 minutes, transfer to wire racks to cool completely.

What can you use instead of avocado oil?

You can use any type of mild oil, such as canola or MILD olive oil.
