Easy Cheesy Gnocchi with Spinach recipe. This is a great quick vegetarian dinner idea that is perfect for lazy weeknights.
Lately, I have been on a real breakfast-for-dinner kick that I have been wanting to break.
My most recent addiction has been oatmeal, specifically this snickerdoodle oatmeal in the past couple of weeks.
But John is not such a huge fan of eating breakfast for all meals of the day, so I have had to find balance in making a quick and easy weekday meal that doesn’t resemble oatmeal in any way.
Do you remember that time that I made my Gnocchi Mac and Cheese??
Well this Cheesy Gnocchi with Spinach recipe is very similar to that, but with spinach. Sounds good, right??
This recipe is ready in 20 minutes, and is made with less than 10 ingredients. The exact list of criteria I look for in any weeknight meal.
John always complains that I don’t cut the baby spinach up enough in my dinner recipes, but I love the way it looks in photos! If he wants it cut up, he should just make it himself.
And you know what? Even though he hates cooking, he might even make this recipe himself.
It is so easy to make; even someone who is almost allergic to stepping foot in the kitchen could make this recipe.
So next time I try making oatmeal for dinner (again!), you can bet John will be in the kitchen right after making this gnocchi.

Cheesy Gnocchi with Spinach
Ingredients
- 4 Tbsp salted butter
- 4 cloves garlic, minced
- 1/2 tsp Italian seasoning
- 2 Tbsp all-purpose flour
- 1 cup vegetable broth
- 3/4 cup half and half cream
- 2 cups Parmesan cheese, grated
- 500 g gnocchi
- 1 cup baby spinach
Instructions
- In a large skillet, melt the butter. Add in the garlic and cook until fragrant.
- Mix in the Italian seasoning and flour. Slowly add in the vegetable broth. Allow to simmer, mixing continuouslt until the sauce has thickened. Once the saucec has thickened, mix in the cheese until it has melted.
- Meanwhile, bring a large saicepan of water to a boil. Add in the gnocchi and cook until the gnocchi floats to the top.
- Add the drained gnocchi to the sauce. Mix in the spinach. Serve immediately.
