Easy Lemon Raspberry Oatmeal recipe. A healthy way to start the day, this breakfast tastes so fresh and keeps you full until lunch.
Okay, okay I know. Raspberries and lemons are not in season yet. But really, what IS in season in February?!?
Thank goodness for frozen fruit! I am buying frozen fruit on a regular basis, waiting for the time when I can buy fresh berries that DOESN’T taste like sweetened water.
And also eating this Lemon Raspberry Oatmeal on repeat.
Even though I prefer fresh fruit to frozen fruit any day of the week, frozen berries are some of my favourite things to add into my morning oatmeal.
The contrast between the steaming hot oatmeal and the frozen berries is something that I have always loved. Ever since I was a kid.
My dad used to make oatmeal for us every morning when I was growing up, and I would always love to raid our freezer for frozen fruits. I guess some things never change.
I would even eat ice cream with my hot tea at night, and my mom would always get mad at me. She would tell me that doing this will crack my teeth.
Don’t think that teeth are that breakable, so I was never worried.
And I continue to cool down my hot bowl of oatmeal in the morning with frozen fruit, over 20 years later.
This recipe sort of reminds me of my Fruit, Figs and Peanut Butter Coffee Oatmeal in that I add a lot of frozen fruit to it.
But this recipe is a heck of a lot easier, being made with only 7 ingredients. And most of the ingredients you probably already have in your pantry.
I would just recommend that you pay attention to the directions. If you add the lemon juice too early, your milk will separate. This has happened to me when I was testing this recipe and it freaked me out. But don’t worry. It still works and will still taste amazing.
Lemon Raspberry Oatmeal
Ingredients
- 1 cup milk of choice
- 1/2 cup old fashioned oats
- 1 packet stevia
- 1 tsp lemon zest
- 1 Tbsp chia seeds
- juice of 1 small lemon
- 1/4 cup raspberries (fresh or frozen)
Instructions
- Heat the milk in a small saucepan on medium heat. Add in the oats, stevia, chia seeds and lemon zest. Bring to a boil, and reduce the heat. Allow to simmer for 4-5 minutes, stirring occasionally.
- Stir in the lemon juice and pour into a bowl. Top with raspberries.
