Still at home, using up all of the ingredients I can find around the house.
It’s a good thing I bought 10 lbs of oats back in November. I am still working my way through those, though these days it seems like I am going through it at an alarming rate.
And in the back of my cupboard, what do I find but a container of raisins? Most people’s most hated food is my treasure. Raisins in oatmeal is my new quarantine staple.
And just when you thought oatmeal and raisins couldn’t be beat. I come up with Coffee Cinnamon Raisin Oatmeal.
Okay, so maybe I’m in the minority of people who think raisons are good. But in a quarantine, I am sure you would eat anything you find around your house just to delay having to go to the grocery store.
Since I have found these raisins in my house, I have made all sorts of goodies: oatmeal raisin chocolate chip cookies, raisin and coconut pumpkin bread and now this oatmeal on repeat.
If you are wondering whether or not to make this oatmeal, I would say: DO IT. Even if you don’t like raisins, just omit them! Or replace them with chocolate. Whatever you have on hand really!
What you need to make Coffee Cinnamon Raisin Oatmeal
Basically pantry essentials! All you need is:
- strong brewed coffee
- milk
- rolled oats
- cinnamon
- chia seeds
- stevia
- raisins
That’s it!

Coffee Cinnamon Raisin Oatmeal
Ingredients
- 1/2 cup strong brewed coffee
- 1/2 cup milk of choice
- 1/2 cup rolled oats
- 1/2 tsp ground cinnamon
- 1 Tbsp chia seeds (optional)
- 1 packet stevia
- 1 Tbsp raisins (+ more for topping)
Instructions
- Heat the coffee and milk in a small saucepan on medium heat. Add in the oats, cinnamon and chia seeds, if using. Mix in the stevia. Bring to a boil, and reduce the heat. Allow to simmer for 4-5 minutes, stirring occasionally.
- When thickened, pour into a bowl. Top with additional raisins, if desired.
