Easy Cream of Chicken and Gnocchi Soup recipe. Tastes like the one from Olive Garden, this homemade version is a lot healthier.
Finally found some chicken in the grocery stores!!
Now that this quarantine has been going on for a month, I think that people have realized that you don’t need to buy out all of the food in the grocery stores.
And, I am finding toilet paper more and more on the shelves. Things are looking up, even though this quarantine has extended in Illinois until the end of May.
Since we can’t go to our favourite restaurants while we are in quarantine, let’s bring our favourite restaurants home, shall we?
With this Cream of Chicken and Gnocchi Soup, you won’t need to go to Olive Garden again.
Or maybe until the quarantine is over. I always like having someone cook for me.
Every week, I have been buying gnocchi from Imperfect Produce. One: because it is so cheap. Two: because it keeps really well in the pantry. And three: because you can make some dang delicious food with it.
Lately, I have been making Gnocchi Mac and Cheese and my 3 Ingredient Pesto Gnocchi. But now, I have been really craving soups. Because, at least in Chicago, you wouldn’t be able to tell that it is spring. Warm sweaters, tea and soup are happening on a daily basis here, and I’m not mad about it.
This Cream of Chicken and Gnocchi Soup is so good, and uses mainly pantry essentials. The only ingredient that is hit or miss here is the chicken (mainly because the stores seem to be sold out lately) and the gnocchi.
But with a soup like this, I will make sure that I have gnocchi on hand at all times. Because this soup needs to happen on a regular basis around here!!

Cream of Chicken and Gnocchi Soup
Ingredients
- 1 Tbsp oil
- 1 large chicken breast, cubed
- 1/2 cup salted butter
- 1 medium onion, diced
- 2 stalks celery, diced
- 1 medium carrots, peeled and grated
- 2 cloves garlic, minced
- 1/3 cup all-purpose flour
- 4 cups chicken broth
- 3/4 cup half and half
- 3/4 cup milk
- 1 (16 oz) package potato gnocchi
- 1/2 tsp dried rosemary
- 1/2 tsp salt
- 1/4 tsp ground black pepper
- 1/4 tsp ground nutmeg
- 1 cup baby spinach
Instructions
- In a large skillet, cook the chicken in the oil until no longer pink. Set aside.
- In a large saucepan, melt the butter. Cook the onion, celery, carrot and garlic until the onions are transparent.
- Mix in the flour and cook for around 3-4 minutes. Pour the chicken broth, half and half and milk over the vegetable mixture and cook until the mixture begins to thicken, around 5 minutes. Reduce heat and stir in the gnocchi and chicken. Mix in the rosemary, salt, pepper and nutmeg. Cook until the gnocchi becomes tender, around 8-10 mintues. Stir in the spinach.

This soup looks so filling and warming. I love gnocchi in soup and I love potato gnocchi! Why not try making your own gnocchi? They’re quite easy! Then you’ll definitely have them on hand when you want them!
