Easy Carrot Cake Oatmeal recipe. Made with carrot juice, this sweet treat is the perfect healthy way to wake up in the morning.
You know how I’m always a couple of months behind all of the food trends?
At least this time, I am only 1 month behind on the Easter carrot cake craze.
Plus, I just wanted an excuse to use up my carrot juice. John is really not a fan of it, and I don’t want to be drinking it all by myself.
This Easy Carrot Cake Oatmeal is perfect to make on busy mornings. Unlike your typical carrot cake, you do not need to shred your carrots. All you need is your favourite carrot juice.
And, while I like my decadent oatmeal recipes in the morning, you can definitely omit the frosting if you want.
It’s a great quarantine recipe, because you probably have all of the ingredients at home.
All you need is:
- carrot juice
- oats
- chia seeds
And if you wanted the frosting:
- cream cheese
- butter
- powdered sugar
- milk
- vanilla
Lately, I have been making my Coffee Peanut Butter Cup Oatmeal, but somehow during quarantine, I have been getting a little sick of chocolate.
Is it possible that, dare I say it, I am getting sick of chocolate?
No. Never. But it’s always good to switch it up a little. This super simple oatmeal is perfect, even months after Easter. 😉

Easy Carrot Cake Oatmeal
Ingredients
Oatmeal
- 1 cup carrot juice
- 1/2 cup old fashioned oats
- 1 Tbsp chia seeds
Frosting (optional)
- 0.5 oz cream cheese
- 0.5 oz salted butter, softened
- 1/3 cup powdered sugar
- 3/4 tsp milk
- 1/4 tsp vanilla extract
Instructions
- Heat the carrot juice in a small saucepan on medium heat. Add in the oats and chia seeds. Bring to a boil, and reduce the heat. Allow to simmer for 4-5 minutes, stirring occasionally.
- Meanwhile, in a small bowl, mix together the frosting ingredients until smooth. Set aside.
- Pour the oatmeal into a bowl, and top with the frosting. Serve immediately.
