Trying to get creative with the very few ingredients I have in my kitchen.
Before this whole pandemic started, John saw what was happening in China on the news and said “you know, we should probably stock up on some food like rice and beans”.
I kind of scoffed because I thought that was a huge overreaction. Now it turns out, it was a good thing we bought that extra big bag of rice and a couple of extra packets of yeast.
But now that we have so much rice, I don’t really know how to get creative with it. Other than eating it with eggs and sriracha, I have been blanking lately.
So this Rosemary Lemon Chicken and Rice will definitely be on a heavy rotation around here.
The best part about this recipe is that it is made with chicken, rosemary and pantry essentials that I am sure you already have at home. And that’s it! Making this recipe perfect for a quick and easy dinner idea.

Typically, I make my Taco Rice Casserole. But since we haven’t been leaving the house lately, we ate through our supply of beans and tomatoes.
And basically everything else in the house.
Except for the rice! So thank you John for making sure we stocked up. Plain rice with salt and pepper is a balanced meal too, right??
Rosemary Lemon Chicken and Rice
Ingredients
- 1 cup rice
- 1 lb chicken breasts, thinly sliced
- 1 tsp salt
- 1/4 tsp ground pepper
- 1 Tbsp avocado oil
- 1/2 cup chicken broth
- 4 cloves garlic, minced
- 1 Tbsp fresh rosemary, chopped
- 2 Tbsp milk
- 1 medium lemon, juiced
Instructions
- Cook rice in an Instant Pot or saucepan until done.
- Meanwhile, season the chicken with salt and pepper.
- Heat the avocado oil in a large skillet over medium heat. Place the chicken in the hot skillet and cook on each side for around 3 minutes or until cooked through. Remove from heat and set aside.
- Add the chicken broth, garlic and rosemary in the skillet and stir. Bring to a boil and reduce the heat to simmer for around 3 minutes.
- Turn off the heat and stir in the rice, milk and lemon juice. Place the chicken on top of the rice and garnish with lemon slices.

This is one of my favorite meals to whip up for an easy weeknight dinner! The rosemary and lemon gives such a delicious and fresh flavor fo the chicken. And then I roasted some veggies on the side. Loved it!
