Okay, so I haven’t admitted this to anyone yet but… I am going back to Vancouver for the holidays.
What? From Chicago? How did you manage that?
Well I am a Canadian citizen, and my job and my husband’s job is online until February (maybe longer…). So instead of isolating in Chicago, I am going to be isolating in Vancouver with family! After a 2 week quarantine of course.
So in preparation for returning to Canada, let me just make all things maple. Starting with this Maple Almond Butter Latte Oatmeal.
The crazy thing is, my husband HATES maple. And he is born in Canada! Truly, a disgrace.
But he did like this oatmeal when I made it for him this morning. Maybe because I made it for him.
…probably because I made it for him.
But don’t take my husband’s lacklustre enthusiasm for maple deter you from making this oatmeal. I promise you, it is quickly becoming one of my favourites.
Plus it’s so easy too! All you need is:
- coffee
- milk
- oats
- chia seeds
- almond butter
- maple syrup.
So simple, right?
But if you, like my husband, are not a fan of maple, might I interest you in the Healthy Cinnamon Dolce Latte Oatmeal that I made a couple of weeks back? That one tastes quite a lot like this one, minus the maple and the almond butter.
Honestly, customize this recipe to your tastes because it is so so versatile!

Maple Almond Butter Latte Oatmeal
Ingredients
- 1/2 cup strong brewed coffee
- 1/2 cup milk of choice
- 1/2 cup old fashioned oats
- 1 Tbsp chia seeds
- 1 Tbsp almond butter
- 2 tsp maple syrup
Instructions
- Heat the coffee and milk in a small saucepan. Add in the oats, chia seeds, almond butter and maple syrup. Bring to a boil, and reduce the heat. Allow to simmer for 4-5 minutes, stirring occasionally.
- Pour into a bowl, and top with additional almond butter, if desired.

OMG this looks soooo good! I love having brunch parties at my house so I’d love to make these into mini portions for everyone to have as a little starter. Love that you sued good old fashion oats. Can’t go wrong with that!
