Have you noticed my abundance of cookie recipes lately?
Lately it seems like all I have time for is cookie baking. I can mix it up, scoop it out, pop it in the oven and continue working. Stop working for a minute to take it out the oven, then continue working until they cool.
Then stress eat the cookies and repeat. This month is feeling crazy busy for me, and I am counting the days until Spring Break.
In the meantime, I will be stress baking/eating these Cranberry Chocolate Chip Oatmeal Cookies until further notice.
What do you need to make these Cranberry Chocolate Chip Oatmeal Cookies?
They are so easy to make. All you need is:
- butter
- brown sugar
- eggs
- oats
- flour
- baking soda
- salt
- dried cranberries
- chocolate chips
Basically your pantry staples, right?
A couple of weeks ago, I made some Cranberry White Chocolate Nutella Cookies, and both that recipe and this one are giving me major Christmas vibes.

Cranberry Chocolate Chip Oatmeal Cookies
Ingredients
- 2/3 cup salted butter, softened
- 2/3 cup brown sugar
- 2 large eggs
- 1 1/2 cups rolled oats
- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup dried cranberries
- 1 cup semi-sweet chocolate chips
Instructions
- Preheat the oven to 325˚F.
- In the bowl of a stand mixer, beat together the butter and brown sugar until light and fluffy. Mix in the eggs one at a time until fully combined.
- In a separate bowl, mix together the oats, flour, baking soda and salt.
- Slowly mix the dry ingredients into the wet ingredients until fully incorporated.
- Fold in the cranberries and chocolate chips.
- Using a medium cookie scoop, scoop the dough onto a greased cookies sheet and bake in the preheated oven for 10-12 minutes.
- Remove from the oven and let sit on the cookie sheet for around 2 minutes, then transfer to wire racks to cool completely.
