Easy Instant Pot Pork Chops and Gravy recipe. This dinner idea is a healthy and cheap weeknight meal ready in under 30 minutes.
Let’s make meals that don’t heat up our house this summer. That is all I want right now.
My Instant Pot and my stovetop are the only thing I want to turn on right now. So that makes these Instant Pot Pork Chops and Gravy the perfect dinner on this hot day.
I don’t know about where you live, but Chicago is HOT during the summer. We have the fans running in our house 24/7, and John goes to his office every day just for the air conditioning.
I have also been making this Graham Cracker Chocolate Chip Ice Cream on repeat as well because it is way too hot to venture outside and buy store bought. So I am at home, trying to use up the ingredients that I have on hand with only my stove and my Instant Pot.
And sometimes a little help from Uber Eats 😉.
But this recipe is so easy and uses some pantry essentials so you also can stay in your cool air conditioned house.
All you need is:
- butter
- shallots
- pork chops
- beef broth
- Worcestershire sauce
- cornstarch
- sour cream
So if you wanted to make pork chops but didn’t want to turn on your oven, this is the recipe for you!
They also keep very well in the fridge and are excellent for leftovers. Two days without having to turn on the oven? Now that’s considered a win in my books!

Instant Pot Pork Chops and Gravy
Ingredients
- 2 Tbsp salted butter
- 1 medium shallot, diced
- 2 medium boneless pork chops
- 1 cup beef broth
- 1 Tbsp Worcestershire sauce
- 1 1/2 Tbsp cornstarch
- 1/2 cup sour cream
Instructions
- Set the Instant Pot to sauté. Melt the butter. Add in the shallots and cook for 2-3 minutes.
- Sear the pork chops for 2-3 minutes on each side.
- Turn off the Instant Pot. Pour in the beef broth and Worcestershire sauce. Close the Instant Pot, making sure the valve is set to "sealing". Cook on high pressure for 15 minutes.
- Allow pressure to release naturally for around 5 minutes, then manually release.
- Remove the pork chops and turn the Instant Pot to sauté. Mix in the cornstarch and sour cream, mixing until the gravy thickens.
- Turn off the Instant Pot. Pour the gravy on top of the pork chops.
Notes
- These pork chips are best enjoyed immediately. However, if you do have leftovers you can store it in an airtight container in the fridge.
- You can replace the sour cream with Greek yogurt.
