Easy Strawberry Pancakes recipe. This healthy breakfast idea is quick and simple to prepare on a busy morning.
Lately I have been seeing all of these back to school ads, and this is making me compulsively buy strawberries and other berries.
Summer won’t end if I am still buying berries, right? Can I bribe anyone with these Strawberry Pancakes to push back the start of the school year?
What you need to make Strawberry Pancakes
We just won’t tell them how easy they are to make. Because even my uncaffeinated self can manage to make these pancakes every day for the past week. All you need is:
- Greek yogurt
- milk
- baking powder
- eggs
- vanilla extract
- butter
- white sugar
- flour
- strawberries
That’s it!
Of course, feel free to substitute the strawberries for any other fruit you want. Blueberries, raspberries… maybe not apples. I am not quite ready to be thinking about fall flavors just yet. And to take these pancakes up another notch, try drizzling them with Homemade Pancake Syrup. There’s nothing better than homemade pancakes with homemade syrup on top.
These pancakes are great right off of the skillet, and they are also great the next day!
To save the leftovers, just allow pancakes to cool on a wire rack, then place in a freezer bag. Pop them in the freezer, and you have some toastable pancakes for days! Perfect for busy mornings.

Strawberry Pancakes
Ingredients
- 2/3 cup Greek yogurt
- 1/3 cup milk of choice
- 2 tsp baking powder
- 2 large eggs
- 1/4 tsp vanilla extract
- 4 Tbsp salted butter, melted
- 2 Tbsp granulated sugar
- 1 cup all-purpose flour
- 1 cup fresh strawberries, diced
Instructions
- In a large bowl, mix together the Greek yogurt, milk and baking powder until smooth. Beat in the eggs one at a time until fully incorporated. Mix in the vanilla, butter and sugar.
- Mix in the flour until just combined. Fold in the strawberries.
- Heat a medium skillet over medium heat and spray with cooking spray. Scoop 1/4 cup of the batter for each pancake and flip when bubbles are covering the surface of the pancakes. Flip and cook the other side until it is golden. Repeat for the remaining pancakes.
Notes
- If you do not finish all of the pancakes, place the leftovers on wire racks to cool then transfer to a freezer bag and place in the freezer. Then you can toast them in your toaster for a quick and easy breakfast.
- The nutritional information is approximate. It will depend on what brands and how much toppings you use.
