Easy Sugar Free Pound Cake recipe. Stevia gives this cake sweetness, while sour cream makes it rich and moist.
I’m already planning for recipes to make after the holidays are over.
If you’ve been following me for a while now, you will know that I am a sugarholic. I can’t get enough. So every year, I make the New Year’s resolution of eating less sugar.
And then 2 weeks later I am back to mug cakes for breakfast and cheesecake for dessert. This year, I am prepared for the resolution with this Sugar Free Pound Cake.
I love a good pound cake. But for some reason, I only have one pound cake recipe on my blog: my Apple Pound Cake. I’m going to have to make a lot more, because that is unacceptable to me.
But this Sugar Free Pound Cake will be made on repeat in the New Year, so maybe these two pound cake recipes are the only ones you need!
What do you need to make this Sugar Free Pound Cake?
Pound cakes are notoriously easy to make, and this one is no exception. All you need is:
- flour
- salt
- baking soda
- butter
- baking stevia
- eggs
- vanilla extract
- sour cream
That’s it!
I love having this Sugar Free Pound Cake with a cup of coffee in the morning or a cup of tea in the evening. It is the perfect, healthier for you treat.
This might be the year that I keep my New Year’s resolutions for more than 2 weeks!! 😉

Sugar Free Pound Cake
Ingredients
- 1 1/2 cups all-purpose flour
- 1/4 tsp salt
- 1/4 tsp baking soda
- 3/4 cup unsalted butter
- 1 1/4 cup splenda stevia (or any granulated baking stevia)
- 2 large eggs
- 2 tsp pure vanilla extract
- 1/2 cup sour cream
Instructions
- Preheat the oven to 350˚F. Line a loaf pan with parchment paper and set aside.
- In a medium bowl, mix together the flour, salt, and baking soda and set aside.
- In a separate bowl, cream together the butter and the stevia until fully combined. Add in the eggs one at a time, mixing after each addition. Mix in the vanilla extract and sour cream until fully incorporated.
- Slowly mix in the dry ingredients into the wet ingredients until just combined.
- Pour the batter into the prepared loaf pan and bake in the preheated oven for 60-65 minutes, or until a toothpick inserted comes out clean.
- Remove from the oven and allow to cool in the pan on a wire rack for around 10 minutes. Remove from the pan and allow to cool on the wire rack completely.

I love pound cake but it can contain so much sugar. I’m so glad to have this recipe and am looking forward to trying the baking Stevia!

Hope you love it!

Not only do I love pound cake on its own, but I like using it as a base for desserts, this version is wonderful when I want to have something sweet without all the sugar.

I love pound cake, but not all of the sugar that goes into one. Love that your recipe is sugar free! Excited to give it a taste!
atasteofmadness
Let me know how it goes 🙂

My husband loves it! As a diabetic, it is hard to find sugar free recipes that taste good. Have you ever tried to freeze a loaf? I would like to make an extra one and freeze it. Would that work? Thanks!
atasteofmadness
Yes that would work! So glad your husband loves it 🙂

This sounds like a great recipe for diabetics. I have been making things for my man like this. I love making the pound cakes that usually come out with a crusty top
Sandy Payne
Can you freeze the batter?
atasteofmadness
I have never tried it, but I don’t see why not!

You can barely taste the difference between this and regular pound cake. My husband and brother are diabetic so it was a great dessert to make for them. I’ll probably try it with whole wheat flour to see if that works too! Thanks!
atasteofmadness
That makes me so happy to hear! I’d love to hear how it worked out with whole wheat flour!
Venetia Gentzler
I’ll let you know! My sister in law has modified several recipes to whole wheat for my brother. She’ll have suggestions if I need them! Thanks!

Can I make this pound cake in a Bundt pan? If so do I double the recipe?
atasteofmadness
I have never made it in a Bundt pan, but I don’t see why it wouldn’t work! Yes, I would double the recipe!
Sandra
How many calories and carbs are in this cake? I am new
to making low carb and calorie foods! This looks delicious I really want to try it!

They are on the recipe now!

I would love to make this recipe but I was curious if I could use non-fat plain greek yogurt instead of sour cream.
atasteofmadness
Yes, that would work!
Anita
Thank you so much for your quick response. I will post a comment after I make this recipe.

For anyone who has doubled this cake, and cooked it in a bundle cake pan, what was your approximate cooking time St 350 degrees?
