Valentines Day is over, so it’s time to start thinking ahead to St Patrick’s Day.
And what says St Patrick’s Day more than adding Guinness beer to your meals? First on the menu? This Walnut Crusted Salmon with Guinness Reduction.
What do you need to make Walnut Crusted Salmon with Guinness Reduction
This recipe uses surprisingly few ingredients. All you need is:
- salmon
- walnuts
- Guinness beer
- honey
- apple cider vinegar
- dried thyme
- garlic powder
- salt & pepper
Can I make this ahead of time?
You can! I would recommend making the Guinness reduction first, then pouring it into a mason jar to freeze.
Then, when you are ready to cook the salmon, all you need to do is heat it up and pour it over the salmon once it’s cooked. Since salmon takes almost no time to cook in the oven, you will have dinner ready in no time.

Walnut Crusted Salmon with Guinness Reduction
Ingredients
- 16 oz salmon fillets
- 1/3 cup walnuts, chopped
- 1 cup Guinness
- 2 tsp honey
- 2 tsp apple cider vinegar
- 1/4 tsp dried thyme
- 1/4 tsp garlic powder
- salt and pepper to taste
Instructions
- Preheat the oven to 425˚F. Line a baking sheet with foil and spray with cooking spray. Set aside.
- Place the salmon on the foil, skin side down, and top with walnuts. Press them gently on the salmon.
- Bake the salmon in the preheated oven for 6-12 minutes.
- Meanwhile, in a small saucepan whisk together the Guinness, honey, apple cider vinegar, dried thyme and garlic powder on the stove over medium-high heat. Stir frequently until it coats the spoon. Remove from heat. It should thicken as it cools. The consistency should end up being that of maple syrup.
- Once the salmon is cooked, drizzle the reduction over the salmon.
Notes
- You will want to keep a close eye on the salmon while cooking. Cook time depends on the thickness of your salmon. Your goal is that you want the salmon to flake easily with a fork.
