They are both such versatile ingredients. You can put them in anything and it will taste great.
So this Vegan Quinoa and Sweet Potato Chili was really inevitable.
What do you need to make this Vegan Quinoa and Sweet Potato Chili?
The list may seem long, but to me this is pantry essentials. All you need is:
- oil
- onion
- garlic
- pasta sauce
- cumin
- chili powder
- herbs de provence
- black beans
- vegetable broth
- sweet potatoes
- quinoa
- salt and pepper
Make ahead
This recipe is great to make ahead. In fact, the leftovers for this Vegan Quinoa and Sweet Potato Chili might even be better than it is when it is just cooked. To me that is.
You can make this a day before and have it for lunch, or enjoy it right away off of the stove. Any way you enjoy this vegan meal, it will taste good. I promise.

Vegan Quinoa and Sweet Potato Chili
Ingredients
- 1 Tbsp avocado oil
- 1 medium onion, diced
- 5 cloves garlic, minced
- 3/4 cup pasta sauce
- 1 Tbsp cumin
- 1 Tbsp chili powder
- 1 tsp herbs de provence
- 2 (15 oz) cans black beans, drained and rinsed
- 4 cups vegetable broth
- 1 cup diced sweet potatoes
- 1 cup quinoa
- salt & pepper to taste
Instructions
- In a large saucepan, heat the oil over medium heat. Cook the onions until translucent and fragrant.
- Mix in the garlic and cook for around 2 minutes.
- Mix in the pasta sauce, chili powder, cumin and herbs de provence. Cook for an additional 2 minutes.
- Add in the beans, vegetable broth and sweet potatoes. Cook for around 5 minutes.
- Mix in the quinoa and continue cooking for around 20 minutes, stirring frequently until the sweet potatoes and quinoa are cooked. Add more water until the chili reaches your desired consistency.
