Easy Black Bean Quinoa Tacos recipe. This vegetarian dinner idea makes a great weeknight meal that’s vegan and gluten free.
Do you do Meatless Mondays?
I never used to, but ever since the beginning of the pandemic when meat was really hard to find, I quite liked having a break from cooking meat. Even if it’s just once a week.
More than once a week this week, because I am making these Black Bean Quinoa Tacos both today and tomorrow for Taco Tuesday. They are that good!
What you need to make Black Bean Quinoa Tacos
Though the list seems long, the ingredients are probably already in your pantry. You’ll need:
- oil
- onion
- salt
- garlic
- chili powder
- cumin
- cayenne pepper
- tomato puree
- quinoa
- vegetable broth
- black beans
- corn tortillas
- toppings (lettuce, avocado, salsa, … etc)
Variations
Of course you can always make these tacos with ground beef and they would still taste great.
In terms of this recipe, I would say to play with the spices a little until you get it just the way you like it. I use extra spicy chili powder and cayenne pepper from a specialty store just around the corner from my house. However, I made this recipe for my in-laws and it was a little too much spice for them. I would start with a 1/2 tsp of each and continue adding until it reaches your desired spice level.
