Easy Chicken Taco Soup recipe. This quick dinner idea makes a great gluten free weeknight meal. It is the ultimate comfort food.
Yesterday, an online snow day calculator told me that there was a 99% chance of getting a snow day today.
Well today came and went, and I still needed to go to school. As a teacher, I’m not mad about it though. I feel like I am always so behind with my classes, I don’t think I can afford to miss another day of school.
On the plus side, all this snow is making me want to make soups on repeat. And this Chicken Taco Soup is one of my favourite comfort meals for cold days.
What you need to make Chicken Taco Soup
This uses all of my pantry essentials, plus my leftover rotisserie chicken I got from Costco the other day. All you need is:
- oil
- onion
- taco seasoning
- chicken broth
- shredded cooked chicken
- diced tomatoes
- black beans
- kidney beans
That’s it!
Can I make this soup in the Crock Pot?
I know it gets busy on weeknights, and the slow cooker makes things so much easier. You can definitely use the Crock Pot for this soup! Just brown the onions, before adding it to the slow cooker, then add all of the other ingredients. Cover, and cook on low heat for 5-6 hours. Top with your desired toppings.
Can I substitute turkey instead of chicken?
The beauty of this recipe is that it is so versatile. If you have some leftover turkey from Christmas, Thanksgiving, or some other celebration, you can definitely substitute it for the chicken.
You can also switch out the beans with your favourite beans. It’s so easy to make this your own!

Chicken Taco Soup
Ingredients
- 1 Tbsp oil
- 1 medium onion, diced
- 2 1/2 Tbsp taco seasoning
- 2 cups chicken broth
- 1 1/2 cups shredded cooked chicken
- 2 (14 oz) cans diced tomatoes
- 1 (15 oz) can black beans, drained and rinsed
- 1 (15 oz) can kidney beans, drained and rinsed
Toppings
- sour cream
- cheese
- lime slices
Instructions
- In a large saucepan, heat the oil.
- Cook the onion in hot oil until fragrant, around 2-3 minutes.
- Add in the taco seasoning and cook for around 1 minute.
- Mix in the chicken broth , shredded chicken, diced tomatoes, black beans and kidney beans. Allow to simmer for around 20 minutes, stirring occasionally.
- Ladle into bowls and top with desired toppings.
