Bread pudding: is this a dessert, or a breakfast?
I mean, you could say the same thing about doughnuts. A lot of people get them first thing in the morning with a coffee, but they are usually deep fried and frosted with a sugary glaze. What makes it acceptable to eat doughnuts for breakfast and not cake?
So let’s just forget about all of the rules and have this Leftover Doughnut Bread Pudding for breakfast. Next week is Mother’s Day after all. What better way to start the day than basically a donut casserole.
What you need to make Leftover Doughnut Bread Pudding
Got some leftover, stale donuts? Then this recipe is for you! All you need is:
- leftover donuts
- butter
- eggs
- milk
- sugar
- cinnamon
- vanilla
That’s it!
Tips
Just know that every time you make this bread pudding, it will look different. It all depends on the donuts you are using, how small you cut the donuts, and how long you soak the donuts.
For a softer bread pudding, you can do one of two things. Either soak the donuts for a longer period of time, or cut the donuts up into smaller bites.
Don’t have stale doughnuts? Try making this with stale brownies, or stale cake! I love rescuing stale food items from the trash, because I hate food waste. This makes something completely new out of something that you may have tried to throw away.
Have multiple varieties of doughnuts? That is absolutely fine! I have tried it with a mixture of Krispie Kreme original donuts, jelly donuts, cake donuts, Boston Creme.. and it all tastes great together. Use what you have on hand!

Leftover Doughnut Bread Pudding
Ingredients
- 6 cups leftover doughnuts, cut into 1 inch chunks
- 3 Tbsp salted butter, melted
- 4 large eggs
- 2 cups milk
- 1/2 cup granulated sugar
- 1 tsp ground cinnamon
- 1 tsp vanilla extract
Instructions
- Preheat the oven to 350ºF.
- Lightly spray an 8x8 square baking pan with cooking spray. Add in the doughnut chunks. Pour the melted butter on top and mix to combine.
- In a medium bowl, mix together the eggs, milk, sugar, cinnamon and vanilla.
- Pour the milk mixture over the doughnuts. Allow to sit for around 5 minutes so that the doughnuts absorb the liquid.
- Cover the baking pan with foil and bake in the preheated oven for 25 minutes. Remove the foil and return to the oven for an additional 25 minutes.

What a fun use of leftovers. We made blueberry donuts last weekend and had a few left over, so your recipe popped up at the right time! Delicious all by itself warm with coffee or as a dessert with a bit of ice cream on top!
