Lately, I have made it a habit to wake up earlier than everyone else in my house and making mug cakes for breakfast.
Honestly, these slow mornings are the best part of the day. I can make coffee, read a book or plan out the day. With a very active toddler and working full time as a teacher, it is very difficult to find the time to think, or just have some me-time.
This 3 Ingredient Peanut Butter Mug Cake might be my favorite dessert (or breakfast) right now. It isn’t made with much sugar, and still packs in the delicious peanut butter flavor that I crave. This healthy peanut butter mug cake is definitely something worth waking up early for.
3 Ingredient Peanut Butter Mug Cake Ingredients
You need 3 simple ingredients to make this easy peanut butter mug cake recipe. All you need is:
- large egg
- creamy peanut butter
- white sugar
That’s it!
Tips
Make sure you are using a microwave-safe mug. You’d think this would go without saying, but the amount of times that I grabbed a coffee mug that wasn’t safe for the microwave. This results in the mug overheating and potentially overcooking the microwave mug cake.
Keep an eye on the cake in the microwave! If this is the first mug cake recipe you have made, you want to see how your microwave reacts to cooking a mug cake. Some microwaves are a lot less powerful than others. If you see the cake rise above the mug, pause the microwave a little bit until the cake falls then resume the microwave. Then next time you can adjust the cooking time, or know how closely to watch your mug cake.
Make sure you allow your cake to cool before eating. I know it’s tempting to eat it right out of the microwave, but if you don’t let the cake cool it may be undercooked when you bite into it. This is because the cake continues cooking after you remove it from the microwave for a couple of minutes.
Variations
Add in some mix-ins. Like the peanut butter chocolate combo? Add in some dark chocolate or semi-sweet chocolate chips into the wet ingredients. If your combo of choice is peanut butter and jelly, try adding some raspberry jam in the centre of the batter.
Switch up the peanut butter. I like using both regular and natural peanut butter in this recipe. But if you wanted to try out some different nut butters, I love almond and cashew butter in this recipe.

The texture is a little strange, almost like a pancake. I mixed in chocolate chips, which definitely helped the taste. This recipe is definitely easy, and it does hit the spot when looking for something sweet. Not sure I will make it again.
