Yeah. I basically have no time for anything with exams coming up. I’ve gotta write the tests, write review sheets, double, triple and quadruple check that the questions make sense and are actually doable in the time given.. it is all a huge ordeal.
Which makes my body crave cookies, cakes and all things sweet. Since my time is mostly directed towards work, I need have a quick and easy dessert recipe up my sleeves.
To be honest, that is describing most of the recipes on my blog.
So why not another quick and easy dessert recipe?
But these cookies are extra special. I made healthy cookies, so that I can stress eat all I want.
Okay, so maybe not all I want. I am getting married in 3 months after all. Maybe just enough to make it through exams. Then it is all salads and kale smoothies from there.
I actually laughed out loud when I wrote that. Somehow, I don’t think that is going to happen.
Okay, so let me show you just how selfish I am when it comes to these 5 Ingredient Peanut Butter Chocolate Chia Seed Cookies.
First of all, I made them with peanut butter. Which means that I can’t bring them to school and can’t share them with my colleagues/students. I want to say that this was unintentional.. but I think that secretly I knew what I was doing.
Second, after John ate one, I hid them from him at the back of the fridge. It is so typical of him to eat the whole batch of whatever I baked the night before while I am at school. So now I am secretly taking cookies from the back of my fridge and eating them when he’s not looking. He will never suspect a thing.
5 Ingredient Peanut Butter Chocolate Chia Seed Cookies Ingredients
The only ingredients you need is:
- peanut butter
- chia seeds
- cocoa powder
- maple syrup
- egg
That’s it!
This 5 Ingredient Peanut Butter Chocolate Chia Seed Cookies recipe doesn’t make a lot of cookies, so you may want to double the recipe if you are making it for a crowd.
I also love how these cookies are made in one bowl. Which makes it super quick and easy as well as less dishes to do in the end. Which means all my extra time can be spent towards doing work. Yay! 😕
Also, these cookies aren’t that sweet. I actually really like cookies that are not too sweet so that I can have them for breakfast and not get an intense sugar crash in the middle of the day. Just a warning, in case you are expecting a “typical” kind of peanut butter and chocolate cookie.

5 Ingredient Peanut Butter Chocolate Chia Seed Cookie
Ingredients
- 1 cup creamy peanut butter
- 1 Tbsp chia seeds
- 1 Tbsp cocoa powder
- 1/3 cup pure maple syrup
- 1 large egg
Instructions
- Preheat the oven to 350˚F. Line a cookie sheet with parchment paper and set aside.
- In a medium bowl, mix together all of the ingredients until fully combined.
- Scoop the cookie dough evenly in 12 balls onto the prepared cookie sheet. Press down in a criss cross pattern with a fork. (I like to wet the fork so that the dough doesn't stick to it)
- Bake in the preheated oven for 10-12 mintues
- Remove from the oven, and allow to cool completely on the cookie sheet.
