New Year’s Eve. Time for New Year’s resolutions that will be broken by the time February rolls around.
My thinking is that I don’t go to the gym in January at all. I don’t like overcrowded spaces, so I am going to try to avoid it as best as I can.
John is telling me that that is the wrong attitude, but I don’t care. There are other things that I can do to “live healthier” without going to the gym. Like making this Spinach and Cherry Tomato Spaghetti.
Looking at the blogging year in review, it seems like all of my most popular recipes are dinners. No brownies, cakes or cookies. It was meatballs, mac and cheese and ground beef casserole. Should I really even make desserts anymore?
Okay, so I am obviously going to keep making desserts. But expect more dinner recipes from me. The people have spoken, and I am going to listen!
I am going to start off the year with a super quick and easy recipe that you will have no excuse NOT to make. Even when you are swamped with work, or if you are tired from a long day, this Spinach and Cherry Tomato Spaghetti recipe will look and taste impressive.
I made this Spinach and Cherry Tomato Spaghetti recipe strictly with things that I regularly have in my house. Pasta, veggies and Parmesan cheese. All of the staples to make the perfect meal.
On another side note about this year, would you guys like to see videos? Should I start a YouTube Channel?
I am SO camera shy, that it would maybe start out by being those Tasty style videos, and then maybe transition into doing videos that show my face? I will need to get more comfortable talking to a camera these next few weeks, so expect more videos of me talking on my Instagram stories.

Spinach and Cherry Tomato Spaghetti
Ingredients
- 500 g dry spaghetti
- 3 Tbsp olive oil
- 4 cloves garlic, minced
- 2 Tbsp wine vinegar
- 1/2 cup Parmesan cheese, grated
- 1/2 cup cherry tomatoes
- 2 1/4 cups baby spinach
- chili flakes (optional)
Instructions
- Cook the spaghetti according to package instructions. Drain and set aside.
- In a large saucepan, heat the oil. Add in the garlic and cook until brown and fragrant. Add in the vinegar, tomatoes and spinach until the spinach has wilted. Toss in the spaghetti and the Parmesan, and mix until fully combined. Add in the chili flakes if using.
Notes
- This makes great leftovers for lunch the next day!
- Store any leftover pasta in an airtight container in the fridge for up to 3 days.

Please don’t stop making desserts, but I do love the freshness of this spaghetti dish. Don’t tell anyone that I told you this, but you can exercise in places other than the gym. Go cross-country skiing!

Hahahah.. yes, this is true. I actually just went on a 2 day snowshoeing adventure! It was a lot more fun than being stuck in a gym!

It’s the same for me, the few savoury dishes I have are always the most popular posts. I have done a few videos, tasty style but I do find them a bit time consuming and I always seem to loose momentum with them. But I am sure you would be great if you decided to give them a go. Lovely pasta dish.

Made this last night! Great recipie, put it on top of whole wheat rigatoni noodles instead of spaghetti noodles. I felt healthier eating this if that makes sense. My boyfriend however wouldn’t touch it, It pretty much has all his least favorite ingredients in it, and if I tell him something is healthy he pretty much runs away from it and grabs a bag of chips. I’ll be making this for myself more often! Thanks for the recipie!
