Easy Mini Magnum Bars recipe. Made with only 3 ingredients, this homemade version will satisfy your sweet tooth and save you money.
I don’t think that I have ever met someone who doesn’t like Magnum Premium ice cream bars.
Being from Canada, our stores only sold one or two flavors. Don’t get me wrong, I would never get sick of them and always ended up leaving the store with a box. But now in the US, grocery stores have a full range of magnum ice cream bars available. It is almost overwhelming. So the other day, I bought a mini variety pack. And somehow, I think that the minis taste better than the full sized ones. The rich flavor of the creamy vanilla ice cream paired with the thick shell of chocolate. The minis make me feel like it’s okay to have more than one as a snack. Honestly, I can’t believe that before I tried Magnum ice cream I used to buy fruit ice cream. I am definitely going back.

So of course, I made these Easy Mini Magnum Bars to save me some extra money at the grocery stores. It truly is the perfect anytime treat. I’m planning on making it for my husband for Valentine’s day, because making these is a labor of love.
Easy Mini Magnum Bars Ingredients
You just need 3 simple ingredients to make these mini ice cream bars. All you need is:
- vanilla ice cream
- semi-sweet chocolate chips
- coconut oil
Equipment needed
While the recipe itself is really easy to make , you will need some equipment at home before starting this recipe. This is what you will need:
- Ice Cream Maker
- Mini Silicone Popsicle Molds
- Popsicle Sticks
- Baking Sheets
- Parchment Paper
Tips
Make sure you pay attention to the milk fat content in your ice cream. If you really want a recipe that mimics the Magnum ice creams, you will need to make sure that the milk fat content is high. Otherwise, you won’t get the decadent ice cream indulgences that are signature to Magnum classic bars and their classic taste. Ice creams made with nonfat milk or coconut milk tend to make the bars more flaky and less creamy.
Drizzle additional chocolate on top of the bars. I love the look of chocolate on chocolate. What I like to do is get any leftover chocolate and place it in a small freezer bag. Then cut a corner out so that you can easily drizzle the chocolate on top of the ice-cream bars.
Add more vanilla to the vanilla ice cream. Let’s face it. Sometimes vanilla ice creams that you buy at the store are a little bland. I would suggest either adding in a Tablespoon of pure vanilla extract, or adding in the seeds form a vanilla bean pod.
Varaitions
Switch up the chocolate chips. I have recently been obsessed with Magnum White Chocolate bars. If you also want some white ice cream bars, swapping out the chocolate chips for white chocolate chips works very well in this recipe. Alternatively, you can also switch it for milk chocolate chips or dark chocolate chips for a more rich chocolate coating.
Add some alcohol to these bars! If you want a different decadent chocolate experience, try adding in some chocolate liquor.

Easy Mini Magnum Bars
Ingredients
- 2 cups vanilla ice cream, melted
- 1/3 cup chocolate chips
- 5 tsp coconut oil
Instructions
- Insert wooden sticks into a mini ice cream bar silicone mold. Place the mold on a small tray.
- Pour the melted ice cream into the molds. Place in the freezer to harden overnight.
- When the ice cream has hardened, add the chocolate chips and coconut oil into a small microwave safe bowl. Microwave in 30 second intervals, mixing after each interval until smooth. Allow to cool for around 5 minutes.
- Line a baking sheet with parchment paper.
- Remove the ice cream bars from the silicone molds and quickly dip the bars one at a time into the melted chocolate.
- Place the ice cream bars on the prepared baking sheet and immediately place into the freezer until the chocolate has hardened.
- Store in the freezer until ready to serve.
